Potato salad minimalist here.
potatoes cut up/cubed very small. That is very important in my book. hard boiled eggs. Lots of them (but personally I like the whites better than the yolks so if it is just for me I eliminate some yolks). onions (chopped very small) celery (chopped verysmall )
I will eliminate the onions and celery sometimes depending on who I making it for. I have picky friends and family. đ
dressing: mayo small dab of yellow mustard celery salt onion powder (although I might eliminate or cut down if adding chopped onions) Salt/pepper. (Salt depending on the amount of celery salt) about a teaspoon of sweet gherkins pickle juice
mix and eat. I personally like it best fresh made and not after being refrigerated (especially for a long time). But I am unique also. đ
ETA - just cleaning up all my very embarrassing spelling errorsâŠalthough they are immortalized below so I am not fooling anyone. đđ

My potato salad is nearly the same as my mother made and probably her mother before her. I use red potatoes if I have them on hand, yellow potatoes if not. Hard boiled eggs, about 1/3 eggs to 2/3 potatoes I'd guess. (I prefer a slightly eggy salad.) Diced green onions, diced dill pickles, diced celery if I have it, sliced olives, and sometimes a little sweet relish. For dressing, real mayo, yellow mustard but don't overdo it, dill pickle juice. I can't say any specific amounts but I do make sure to make plenty of the dressing as I don't care for a dry salad.

My potato salad is very different. It is whipped potato salad.
I boil my potatoes and then with the hand mixer I whip them up with Hellmann's( has to be this brand), green onions, radishes and I use celery salt for seasoning.
This is the only potato salad my dh will eat.

My potato salad is very different. It is whipped potato salad. I boil my potatoes and then with the hand mixer I whip them up with Hellmann's( has to be this brand), green onions, radishes and I use celery salt for seasoning. This is the only potato salad my dh will eat. This is similar to mine. I donât bother to use my mixer though. My potato masher has the waffle type holes and works real good to get it smashed. I see that a lot of people put pickles or relish in theirs, but I use cut up fine cucumber in mine. Because, thatâs the way I had it growing up, which is probably what is the most important thing in comfort foods.

Best Foods mayo Russet Potatoes Sliced black olives Chopped green olives ( the ones with Pimentos) Boiled eggs Small squirt of mustard Salt and pepper I don't like onions or celery in my salad

Iâve had good potato salad and âmehâ potato salad .
I live in St Louis and DHâs company has a ballpark night at Busch Stadium every year. It includes dinner and free beer until 730 and then the game. Anyway, itâs really good but simple - hot dogs, hamburgers, tacos this yearâŠ
And the goddamn best potato salad ever.
At my table everyone loved it and we finally realized why - the potatoes were roasted, not boiled. HUGE difference. Weâre pretty sure it was either a lite mayo or Greek yogurt, plus some celery. I canât remember it all but weâre going to try to make it soon.
It was an interesting spin I thought.

This has been so interesting! So many ways to make potato salad. My sister makes a delicious one similar to many here, but uses chopped sweet pickles instead of the dill that I see many people using. I think I would like both versions.

I loved my motherâs potato salad. I did not learn to cook from her as I wasnât interested in cooking as a kid. Now that I cook for my family Iâm sorry I didnât get recipes from her for those childhood meals I loved. I have gotten her spaghetti with meat sauce figured out, but nobody but me eats potato salad until my uncle moved in. I might experiment with some of these. My potato salad has to be Mayo and sour not sweet. Always with eggs plus sliced eggs on top sprinkled with paprika.
I also miss her gravy with sliced boiled eggs served on toast. ETA: huh, just looked it up. Creamed eggs on toast. Definitely a depression era dish.
