How do you make yours? What do you like in it? Potato preference? Just was thinking about this because I threw a quick little potato salad for DH the other day for his lunch. I just tried it and its very meh, not like I normally make it. I didn't have green onions so all I had was fine diced celery and green pepper but I missed that oniony bite. I used some mini yellow potatoes I had on hand that I didn't want to go bad. I cooked them long enough I guess, the were soft and they peeled easy. But in the salad they weren't creamy enough. The potatoes were a bit on the firmer side, sort of like that store bought stuff. I didn't like it. I realized I like my potatoes slightly mushier. I like dice hb egg in mine, about 1/3 ratio to the 2/3 ratio of potatoes my mom uses a bit of Italian dressing in hers and it always tastes so good. Last time I tried adding a bit to mine all I could taste was the dressing. Potato salad can be so hit or miss for me. Its like one thing is off and I don't like it. How about you?

Mine is pretty boring but if I try to change it up I get kickback from the family! I use.... red potatoes hard boiled eggs mayo mustard dry mustard black olive slices salt and pepper That's it!

I LOVE potato salad!
I usually use red potatoes (skin on, obviously) celery red onion scallions mayo s & p a little vinegar
Pretty simple, but delish!
I never add egg...I love egg salad and deviled eggs, but I don't like egg in my potato salad

I use.... red potatoes hard boiled eggs mayo mustard dry mustard black olive slices salt and pepper That's what I like minus the black olives. I do like a bit of paprika too, but I prefer to sprinkle it on rather than have it in the entire salad.

My grandma made the best potato salad. She died in 2008 and I haven't had a really great potato salad since. Her recipe that she wrote down is very rough. I have not tried it. My mom makes it but while it's very good, it's not, great.
Her recipe includes, potatoes (type not mentioned), a drizzle of Mazola oil on top of the cooked and diced potatoes, two boiled eggs, 1 stick? of celery, 1/2 an onion, 1/2 or less of a green pepper, pt of salad dressing (Miracle Whip???, not sure), teaspoon (might be a tablespoon, hard to read) of mustard, paprika, black pepper and salt. And Olive juice for flavor and to thin as needed.

This weekend I am going to try this recipe for german potato salad www.tasteofhome.com/recipes/german-potato-salad/ The Ruby Tuesday salad bar used to have the most delicious german potato salad but it was taken away when they revamped the selections to be healthier and I haven't had any since. I never see it in a deli so I am going to finally try making my own.

@queenofsloths that recipe looks good, with bacon in it! You'll have to come back and post an update. The Birdhouse Lady Olives, I'd forgotten I love diced black olives in my potato salad too but dang it NO one in my family likes olives! IDk what's wrong with them, olives are buttery delicious!

I just finished making our Potato Salad for the weekend! This is my DH’s favorite and there’s never leftovers at our 4th of July parties.
8 Medium Yellow Potatoes (about 3 Lbs) 1 C Sour Cream 1/2C Mayonnaise 1 Small Onion Diced 6 Stalks of Celery Diced 1 1/2C Shredded Cheddar Cheese
The first time I made it with an original recipe I received from a friend, it also had one LB of cooked bacon in it. We really didn’t think the bacon added anything to it, and this from a bacon lover! After the first time, I never used bacon again.

I use an Instant Pot recipe, I think from pressurecookingtoday.com that is pretty standard and good.
Our friend's grandmother used to make the best potato salad- it had green olives in it

I use my granny's recipe
potatoes - peeled, cut fairly small, and boiled.
drain and put in a bowl, pour some Italian dressing over the potatoes, and refrigerate until cold
add onions(diced small) and mayonnaise - stir gently to combine and serve cold.
I also make a smashed potato salad from a recipe given to me by my niece's grandmother on the other side.

I never liked potato salad until I had this one:
Red potatoes Sliced Red onion (as fresh/sweet as possible) Fresh Dill (lots) Dressing- salt, pepper equal parts mayonnaise & sour cream
Best ever.

new red potatoes (cut into quarters or eighths), not overcooked so they hold their shape and retain their skin sliced scallions chopped fresh parsley drained capers homemade vinaigrette

I don’t know where the recipe came from but my mom has made it this way all my life. I don’t have measurements, just what’s in it.
Russet potatoes (boiled with skin on then peeled when cooled) Bacon, diced Bacon fat (yep) Mayo Little bit of yellow mustard Diced eggs Diced onion (optional)

I'm always in search of a good potato salad since my mom and Nana passed away within a month of each other 3 years ago, each leaving behind cryptic potato salad recipes that definitely don't taste like what they made.
My MIL tried, but she used a sweet dill relish which is a no go for me. I'm lucky to live near several amish markets, so I keep trying theirs. We were at a lake in the Poconos this past week and this little deli had a potato salad that was really good. I think I ate the whole amount we ordered almost by myself. LOL

my absolute faaavorite is my MILs recipe where it all comes down to the pickles. SO MUCH PICKLES AND BRINE. And yellow mustard!
I grew up with a mom who made hers sweet and it doesn't hit the same way the picklefest does.

Finally someone besides me that uses the sour cream/mayo combo. No cheese, shredded carrots instead plus a little celery seed, parsley, salt and pepper.

I don’t measure anything but here’s the basics. I boil my potatoes whole. I also put eggs in with the potatoes and boil at the same time. Peel and chop potatoes. Then I drizzle white vinegar over the chopped potatoes. Peel and chop eggs. I add chopped bread and butter pickles and dill pickles. I use green onions with the blades and also some white onion. Black pepper and celery salt. Yellow mustard and lots of Miracle Whip. Sprinkle with paprika on top.

I think the best flavor comes from adding oil/vinegar or Italian dressing to the drained potatoes while they are still hot. It gets all absorbed and makes it delicious. Cool them completely before dressing and adding anything else.

I’ve never used a measured recipe, it’s one of those things my mom threw together so I do the same.
Potatoes, I usually buy Yukon gold, I like the moistness of them. Roughly chopped/chunked. My exMIL mashed hers - I had never seen that before. Mix miracle whip and mustard roughly 3 to 1 ratio. Add juice from Bicks sweet mixed pickles to taste. Coat potatoes generously (here ya where you plop in extra miracle whip/mustard if needed lol) Sometimes add onions, sometimes not depending on who is eating it. Salt and pepper. Top with paprika and sliced hard boiled eggs.
I enjoy Costcos potato salad, nice and creamy and like lots of other homemade versions, especially a warm salad with bacon.
I’ve also never seen a salad with Olives or olive juice in it but I have a strong dislike of olives so don’t think I would like that as an addition.

I had it once at an old fashioned barbecue place in Abilene, TX and loved it. No one else in my family likes it that way, so I sometimes just mash mine. I also think that I’ll try Miracle Whip. I haven’t bought it for years and years, but I bet that’s what my mother and grandmother used in theirs. We never ever had real mayo growing up.
