My daughter raised two hogs for 4-H this year, so she’ll sell one in the livestock sale, but we’re having the other one butchered. We don’t a cut sheet yet, but I’ve done some googling. Anyone have recommendations On which cuts to get or which cuts to avoid? About the only thing I’ve decided so far is that I’m going to leave the pork belly uncured as I can’t buy uncured pork belly where I live.

When do you need to know by? My son is a butcher but he’s at a concert right now, I can ask him to give me a list when he gets home but it might be tomorrow.

This is probably completely unhelpful, but DH's friend used to buy a hog at the county fair and had a lot of it made into sausages. I only remember because he'd always bring them to the Chargers tailgate and they were very popular.

I like a pork shoulder steak but not everyone does I like pork shoulder steaks too, but my husband isn’t a big fan. We’ll probably end up with at least some.

The up side of a pig is you can literally use every part of it if you want. I’ll have him write up a list in order of preference. He’s a chef too so he was able to cut them cook his animals from beginning to end.

But, it’s a 271 pound hog so I don’t want all of it ground. I’m going to keep the pork belly uncured (not made into bacon) bit other than that I don’t really know what is best

I’m a pretty good cook so I’m comfortable figuring out how to use most things, but we’ve never had a pig butchered so I’m not sure what’s the best cuts to get.

I like getting loins as I can cook it a variety of ways, but also can cut it into boneless chops myself if I need to. We butchered a hog during Covid mostly ourselves (first time ever!) and made our own bacon and pancetta!

I don't care for the shoulder steaks, and would rather have the sausage. Another thing to decide is if you want ham whole or cut in half or sliced. Good luck to your daughter! Has she been in 4H long? We had our local fair last Thursday-Sunday, with the auction on Sunday, and they set a new record of 1.3 million! I had 2 grandsons with hogs; I LOVE watching them show for market & then for showmanship.

If you know where the hog will be butchered you can look to see if they have a website with cut lists. We got a 1/4 beef last year from a friend's farm and the butcher they use has a set list that they cut. We had to decide if we wanted to keep or grind/discard certain parts (brisket, heart liver, etc) and how we wanted certain parts (ground beef tube size, how many steaks/cuts in a package).

My husband had hogs for 4-H When he was a kid, but doesn’t remember anything about processing them.
