I hate the nightly what should I make game.
It’s super hot. Bonus marks if it only involves my toaster oven and no big oven or stove top 😂😂.

Sometimes we just open up the cabinets and fridge and see what we can come up with. Often we'll make up some sort of grain bowls or pasta. I often have salad kits in the fridge. I can usually make up some sort of sandwiches. We'll do baked potatoes with lots of toppings - we did this the other night and used our toaster oven. It's so much easier to do this as empty nesters.

What do you have on hand?
Tacos are easy and the beef can be browned in the microwave. Sandwich Pasta or Garden salad
Someone recommended the app Supercook to me for when I'm in this position. You tell the app what you have on hand and it gives you ideas. I personally haven't tried it yet.

What do you have on hand? Teriyaki chicken thighs are easy for us. Same with butter chicken in instant pot. Or a creamy pasta with tons of variations - peas, bacon, shallot, Parmesan etc. Panini sandwiches Grilled sausages served with couscous or another grain and a green salad. It’s super simple we do that a lot.

Growing up without A/C, our hot weather meals were BLTs, tuna-macaroni salad, or sandwiches.

Nights that I don’t wanna cook I usually make pasta salad. Pasta of choice, whatever veggies I have on hand, maybe shredded cheese and some ranch dressing and seasoning.
One of my faves is macaroni, bacon bits, cheese, tomatoes, chopped avocado and ranch

We had grain bowls tonight - package of pre-cooked quinoa and bulgur mix, can of drained black beans, some chopped up red pepper and cucumber, avocado, mango pico, and a drizzle of hatch chile ranch cut half and half with lime juice.

Our quick dinners when its hot almost always are a big salad with grilled chicken on top. I almost always have salad stuff (tomatoes, cucumber, avocado, cheese, blueberries) on hand and also usually have grilled chicken from another meal on hand. Throw on some pecans and croutons and done.

ones we've had recently:
egg salad sandwiches and fruit
homemade bread with a couple of cheese and fruit
bratwurst (in air fryer) and fried apples (I made mine on the stovetop which took a while but that was because I couldn't find the cans)
salad - lettuce or a chopped salad bag with some combination of tomatoes, onions, cucumbers plus a protein (cheese, hardboiled eggs, chicken tenders, grilled chicken)
charcuterie with cheeses, crackers, raw veg, fruit, nuts and/or dried fruit, deli meat if we have some, maybe deviled eggs
growing up our summer friday meal was always a tuna pasta salad - cook the pasta, drain and marinate with italian dressing and chill. Add tuna (from a can, drained), diced onions, and mayonnaise and mix well. Unfortunately my girls won't eat canned tuna so it's been a while since I've made it.

We have been having pita pizzas for lunch or dinner. I use rotisserie chicken but you can use whatever you want. We like BBQ chicken (I use chicken, spinach, red onion, BBQ sauce and a little cheese) or chicken bacon ranch. Put in the air fryer or toaster oven for about 6 min.
Just Bare chicken bites are a go-to here. We make them in the air fryer and add to salads or have with other sides.
Rotisserie chicken with salad.
Pre-made meals like Kevin's, although I like these best when we won't all be home since they don't have enough servings for all of us unless I buy multiple, which is $$$.
Crockpot or IP cool ranch chicken tacos.

I almost always have frozen vegetables and quinoa in steam bags along with plain greek yogurt and cucumber. I’ll pop the veggies and quinoa in the microwave and the most work comes from chopping the cucumber for tzatziki. Lemon juice, garlic, and red wine vinegar mixed with the greek yogurt and cucumber makes a great quick tzatziki sauce. Even better if I manage to make that early enough so the flavors can really form together.

Tuna salad.
Make tuna (with mayo, just like you'd make to put on a sandwich), dump it on a bag of lettuce, stir. I guess you could put tomatoes or cucumbers in there too... Dinner is ready.
This is my it's over 100 degrees not using the oven go-to meal...

I used to do something very similar - quinoa, black beans, chopped tomato, avocado, cilantro, olive oil, lime juice and cumin. Super good light lunch.

I keep leftover taco meat and carnitas in individual servings in the freezer. I'll make a burrito-type bowl with rice and whatever else I have on hand. I add some lime juice to my rice. I add in black beans, black olives, chopped tomato, avocado...whatever I have.
I also keep leftover rotisserie chicken in the freezer for a quick wrap with a tortilla.

Fresh tomato sandwiches. Big salad with grilled chicken (I usually grill up a bunch and keep it handy.) Salmon on the grill (or in the toaster oven) on a bed of spinach. Grilled shrimp (it only takes a couple minutes to cook.) Rotisserie chicken with grapes and french bread.
