My DH has had to go low carb for health reasons.
I made him a pizza with ow carb tortillas( baked them first with a little olive oil to give them texture before adding sauce)
they were ok but i thought i’d ask about cauliflower crust
He generally doesn’t care for cauliflower but wondered how cauliflowery these might taste
Brand recommended?
thanks!

I should add he is allergic to all nuts or I would try making them with almond flour

I don't think the cauliflower crusts are very low in carbs, but they are low carb compared to regular pizza. I had one once and I didn't care for it, but I love pizza dough. It makes or breaks a pizza for me. I eat cauliflower rice, though, and I love it.
I think if I might try almond crust before cauliflower crust if all I wanted was low carb.

I've had if a few times, a premade crust from the store and Pizza 73 has it. One tasted more like cauliflower than the other, maybe the one that didn't also had some gluten free flour. I didn't mind it, better than no pizza. I've been off gluten for quite awhile, I'm not used to soft dough gluten dough so anything is ok to me.

dd15 hated it - the rest of us thought it was edible...but not something we would choose again. I like cauliflower, DH and DD don't

We eat the Milton's brand cauliflower crust. Costco sells it, two in a box, frozen. This is the only cauliflower crust we like and I feel like we've tried them all. I've never tried to make it myself.

I think it has a strong taste and I don't like it. Wish I did!

MOD Pizza has really good cauliflower crusts IMO. They don’t taste like cauliflower at all. Even DH likes them and he doesn’t need to eat gluten-free.
I’ve tried several plain cauliflower crusts from the store to make my own pizza and I haven’t liked any of them.

I have been low carb for years, but have never tried this. Cauliflower has such strong taste, I can’t imagine it in a pizza… Do you know about the site Diet Doctor .com? They have lots and lots of good low carb recipes, with reviews from real people. (I am eating low carb for health reasons too, just like your husband - it is the only way to keep my high blood pressure in check, medication didn’t.)

We LOVE the Milton's frozen cauli crust pizzas at Costco. DH does not need to avoid gluten and he loves them as much as I do. Very thin, very crispy crust. They come with bell pepper and zucchini on them. We add red onion, mushrooms and whatever else we want, bake on oven rack and dive in.
I've purchased cauli crust at TJs to build my own pizza and it wasn't nearly as good.

DH and I like it but DD not so much, but I think that was more because the pizzas we bought weren’t pepperoni. I think she was more opposed to the peppers and other stuff on it than the fact that it was cauliflower crust.

I've never tried to make it myself. I hadn't read your reply when I posted about these. I wouldn't hesitate to serve this pizza to friends at a casual get together, or sliced up into appetizer sized servings. I'll be very unhappy when these disappear from Costco inventory.

It doesn't show up at my Costco very often though. So I just buy some pepperoni and put it on ours.

I think I’ve seen it but I don’t think I bought any since we still had some of the other ones in the freezer. My other thought with those pizzas is they’re pretty skimpy with the cheese. They’re much better if you add extra cheese to them too.

I have a perforated pizza tin that I got cheap at Aldi and it works great for this pizza. It gives support but allows the crust to brown and slightly crisp.

back to add that I just bought a couple of boxes at Costco last week, so it's back in stock.
and I've never seen the pepperoni version, my CC only carries the veggie.

But you have to move quickly! lol. I preheat the oven, get the anchovy can open (yes, I'm one of *those* anchovy people), get dh's pepperoni ready, then I zip them out of the freezer, get that wrapping off, fling on the extra toppings, and get it into the oven. lol. One time I let it thaw before I cooked it because we didn't have room in the freezer. omg, HUGE mistake!

Make sure you look at ingredients if you are getting a premade cauliflower crust pizza. Many brands say that they are cauliflower crust, but they only add cauliflower. They are not carb free, and have just a few carbs less than a regular pizza. When I am doing low carb(most of the time, excluding the last 2 weeks of what can only be described as a feeding frenzy ) I will often make or order a pizza bowl. All the yummy ingredients, light sauce all in a pie tin or other baking dish. Marco's pizza makes an amazing bowl.

Well, even if it was plain cauliflower it wouldn't be carb free because cauliflower has some carbs in it. But there has to be something to bind the cauliflower together... a lot of recipes use some sort of cheese. The Milton's brand uses rice flour because it's gluten free, and of course rice has carbs.

I love the Costco brand cauliflower crust pizzas. Even my DH loves them. I’ve tried quite a few brands and can’t really remember picking up a cauliflower taste. Admittedly, I’m a huge cauliflower fan. But if it could be tasted on the pizza, my DH wouldn’t go near it. They have a wonderful roasted vegetables one, but their meat one is hands down our favorite

I also like the Milton's version of cauliflower crust pizzas. I don't eat the meat one, but the veggie one is good, as is the margarita one.

I’ve made low carb pizza by using ground chicken as the crust. Sort of like a very thin burger patty. I did BBQ chicken by adding bbq sauce, red onions and cheese on top.

We don’t live in the States anymore, but I used to buy a low carb crust. Mama’s? Mama Rosa’s? It’s shelf stable and was by the Boboli pizza sauce. Let me do some googling…
Mama Mary’s thin and crispy crusts. 22 carbs for half a crust, which is quite filling. I’d have the other half for lunch the next day.

Yeah, I know you asked about a cauli crust but I suggest you try a chicken crust! I have made them before and they are so good. I have even gotten them crispy. I used a canned chicken recipe from Lowcarbstateofmind on Tiktok. It does not have a chicken flavor and really low carb. All you need is: 20oz canned chicken 1 large egg 1/2 cup parmesan Salt Pepper Basil Garlic Powder Cook for 30 min on 375° add your toppings and sauce and cook for another 10-15 minutes. I broiled mine at the end and it was AMAZING!
