DH has been complaining that grocery stores here don't stock beef ribs. I know nothing about meat but I'd like to buy beef ribs from a local farmer down the road as a Christmas present for him. I looked on their website and they list ribs as "beef short ribs" but I thought short ribs would be pork since pigs are smaller. (I know, I know, I'm a dope.) And beef ribs would be long, because cow, bigger. Are short ribs the only way beef ribs come? Are short ribs the only kind of beef ribs out there?

Short ribs are a cut of beef taken from the brisket, chuck, plate, or rib areas of beef cattle. They consist of a short portion of the rib bone and the surrounding meat, which varies in thickness. I googled it!! LOL

Sorry, I know nothing of how beef meat is cut.
I have a friend who loves beef ribs and it is alway hard to find them, especially at restaurants. Whenever he is able to find them on a menu you would think he won the lottery. 😄

We get short ribs every year with our quarter cow and I have to say they are not my favorite cut. Usually VERY fatty and hard to cook.

costco has recently started selling beef ribs. not the short rib size but the 9"-12"-ish rib slabs.

We had been cooking them in our Instant Pot for a few years but more recently DH has been cooking them on the pellet grill. Both ways are really good, IMO.

I just don't like them that well, and they are a pain in the butt to cook properly. Not worth the time for me. There are two kinds of beef short ribs. Plate cut is very close to the brisket and you will get a lot of meat on them. These are not a common cut - so you would have to have a butcher that does more specialty cuts (not at the grocery store - they don't get that in boxed beef). Chuck cut is closer to the chuck. Both are pretty fatty. Slow cooking and smoking is the way to go -but still very fatty. You can also get back ribs, but they don't have very much meat. I am beyond shocked at what they cost. For what they cost, you can buy a nice prime rib roast. costco has recently started selling beef ribs. not the short rib size but the 9"-12"-ish rib slabs. Just to be clear - St. Louis ribs are pork, not beef. They are good! ** If you are buying from a butcher or a store - ask them what grade the beef is - no matter what cut. Most supermarkets are probably going to be Select, possibly Choice. You want to stay at Choice, no lower. It is hard to find Prime in stores and some butchers might have it, but it mostly goes to restaurants. If you want the very best beef - ask for CAB Prime grade beef. Make sure it is really that, and not some ad gimmick to make a lesser cut sound like that (Just because the label says "Angus" - it might not be CAB. CAB stands for "Certified Angus Beef" and only the top 3% of beef grades as that. The majority of our beef grades as CAB Prime, and that is rare for a producer to have that much grade that high. We had one select in the last 4 years and my poor husband about had a fit. LOL That cow was culled. We know exactly how each beef we sell grades and yields!

Oh I love beef ribs! Low and slow. I often cook the. In the oven, with balsamic vinegar and beef stock. Probably also some red wine most of the time . Yum! Leftovers (very rare) are amazing the next days on a roll, in pasta sauce. That is a very sweet present!
