I put sauce and cheese on top of the last noodle layer. Otherwise the noodles get crunchy. And I agree, ricotta cheese not cottage cheese.
I went to a friend of a friends house to scrapbook and she said she would make lasagne. Um yeah, it was noodles and hamburger, ketchup and Velveeta. That is NOT lasagne! Blech!

I finish with sauce and cheese too. I use Cracker Barrel four-cheese Italian blend on top…it’s so good! It’s a blend of provolone, pizza mozzarella, Romano and Emmental.

The ricotta mixture isn't how we make it here, I've always made lasagna with a proper bechamel (white sauce with cheese) like this recipeand the last layer is bechamel topped with cheese

This time I did a layer of noodles topped with sliced mozzarella and shaved Parmesan. What do you do? I save some of the meat sauce to spread over the top of the last noodles, then bake with a cover on. Last 15-20 minutes, I take cover off and add a layer of shredded mozza and return to the oven until it is melty and brown.

SOOOOO good. And I always top the last layer of pasta with sauce, bechamel sauce, and lots of cheese.

And would prevent my cheese from sticking to the foil I cover the pan with too!

My favorite cheese layer is made with Trader Joe's Quattro fromagio, eggs and cottage cheese (can't stand ricotta so hate if you must).
Meat & spinach tomato sauce, then a layer of zuchini slices, then pasta, then cheese. Keep repeating until final layer of pasta, meat and cheese.
Yum, yum, yum.

I do like lasagna, but I have never made it. Dh and Ds hate casseroles - something I wish I knew about Dh in advance as maybe I wouldn't have fallen in love quite so hard - and lasagna is too casseroley. 😱😫😢 I really miss tuna noodle casserole and tater tot pie.

I did not read through the whole thread. I know people do their lasagna so many different ways. But one thing I always do...after I build my lasagna (it's 3 layers and I have a big monster pan that is JUST for lasagna), I will cook it for 30 minutes (uncovered). I then take it out and sprinkle mozzarella all on the top and cook for another 15 minutes. Melts the cheese perfectly without burning/overcooking it.
***And yes...only ricotta cheese for lasagna!

When my parents were first married, my dad, who grew up in New York, asked mom, from rural South Dakota, to make lasagna for dinner. Mom had never eaten lasagna. She found a recipe and it called for Swiss cheese, if you can believe that. She made the lasagna and found out after the fact that 1. dad hated Swiss cheese and 2. It shouldn’t be in lasagna. 😂
I have to admit hearing that some people use cheddar throws me for a loop.
Mom also used cottage cheese in all the lasagna she made when I was growing up, but I have to believe that ricotta was difficult or impossible to find in a small midwestern suburb in the 70s and 80s.
I rarely make lasagna myself - it’s a pita and I never seem to do it that well! Even with access to all the right cheeses.

Growing up lasagna included cream cheese in lieu of ricotta. It makes it very rich, but it’s divine! It’s been years since I’ve had it.

Also anyone using cottage cheese instead of ricotta is a monster 😁 My mom always made hers with cottage cheese and it was my absolute favorite meal growing up. I didn't know people used anything else until I was an adult. Ricotta lasagna is good but my mom's recipe is still the best. My sister made my mom's recipe yesterday and it was so good. Our recipe is always fairly light on sauce- I never had a really saucy, gooey one until I was an adult, too. I like my mom's recipe with less sauce better. And I had no idea that people called lasagna noodles anything else but noodles.

My grandparents are straight off the boat from Italy. Ricotta, parm & mozzarella are all included in lasagna. Cheddar cheese does not belong in there. Neither does cottage cheese. Bleck.

I got a pasta maker attachment for my Kitchenaid mixer for Christmas. I used it today to make lasagna noodles. I had never heard of using béchamel sauce in lasagna before and decided to try it. This will be how I make lasagna from now on. It was so good. I used the recipe for the béchamel sauce in the attached recipe. I doctored up a jar of pasta sauce so that I wouldn't have to go to the grocery store. Between the homemade noodles and the sauce this seemed quite fancy - without a doubt the best lasagna I have ever made. Lasagna with Bechamel Sauce
