We were supposed to be having Christmas Eve dinner at my in-laws' but SIL and BIL (who live in Seattle) aren't able to make the drive today, because of the ice storm. It's warming up, starting to rain and melt, but they can't safely leave until tomorrow morning. So, we're pushing our usual Christmas Eve family get-together to tomorrow. Our neighborhood is still iced up too, so we can't get out to the store.
What would you make for Christmas Eve dinner for your immediately family with just what you have on hand? I've got a pretty well stocked pantry, fridge and freezer, but feeling uninspired. When I do holiday meals, I usually carefully plan the menu well in advance and shop accordingly. None of what is striking my fancy for a holiday meal is an option (namely Dungeness crab).

I would do a big pot of soup with muffins and a side salad.
Or roasted chicken with pasta and a lemon herb butter garlic sauce.

Without knowing exactly what you have on hand it's hard but if you have ricotta, you could make homemade ravioli. Or easier, lasagna. Or if no ricotta, maybe Sunday sauce?
We're having filet and creamy blue cheese pasta with roasted red peppers and pine nuts. If you don't have pine nuts, walnuts would work.
You could go even simpler and make homemade individual pizzas.

It’s just us tonight (intentionally, though I’m not happy about it but I didn’t get a say 🙄). I originally bought a turkey breast but dh decided the prime rib we got for tomorrow is way bigger than we need so he cut some off one end and we’re having steaks and mashed potatoes.

Based on what I have on hand:
A) grilled ribeye steaks, roasted sweet potatoes with honey butter and sea salt along with roasted Brussels sprouts
B) seafood lasagna with cheesy garlic bread
C) big pot of chilli with little bowls of toppings along with cheddar green chilli cornbread muffins

We always have just appetizers on Christmas Eve. How about nachos or quesadillas if you have something along those lines? Mix up some margaritas and pretend it's warm outside!

Pasta with olive oil, garlic, spinach, and cherry tomatoes. Top with toasted pine nuts and parm and red pepper flakes. You could add fresh mozzarella or Italian sausage to make it more hearty.

I wouldnt worry about the meal being something specifically "holiday". Make what you want. If that is appetizers, do that. If it is burgers, do that.

we always order pizza for Christmas eve but if I had to pull something together from what I have on hand? I would roast a pork sirloin (less than 2lbs) and add either a box mix (scalloped/au gratin potaoes or stuffing) or roast some potatoes to go with...and then make a slightly fancier veg from my frozen veg selection (meaning I would season it or saute it or roast or sauce it...rather than just steam and eat)

Christmas eve for us is always tamales, enchiladas. layered bean dip, queso, quesadillas etc. beans and rice. So with what I have on hand I could pull that off. I have tamales in the freezer from a local restaraunt that we like.
If I wasn't doing that I would probably just make something low key and then an amazing dessert!

The idea of pulling something together from what I have on hand would never work in my kitchen. I only ever have ingredients for meals that have been planned. I may have frozen pizza for an evening where plans change. I could maybe do a plain baked potato because I always have one or two in case I feel like having that instead of what was planned. But nothing on the fly.
I like the idea of everyone making their own pizzas if you have everything you need.

My favorite quick/fancy meal is boneless chicken breasts with some type of creamy sauce - there are plenty of recipes on Pinterest. Brown rice and glazed carrots.

Tacos with beans n fideo... its easy... everyone eats it...
Always have beans n grd mt in the freezer... usually have corn tortillas in the fridge... always stock boxes of fideo, tomato sauce n chicken powder...

I always keep steaks in the fridge. Fresh sides I don't normally stock so I would have to check my canned stash. I've seen lots of 2-ingredient bread hacks so I would bake up one of those.

We were supposed to be gone as well. We are having ham and cheese sliders and fries. I also got some little lava cakes and ice cream. Youngest DS and I are going to watch Christmas movies while I assume the others will watch football. And of course we will open presents. Hopefully we will be able to go to my moms tomorrow.

We’re having potato leek soup. We’re supposed to have crock pot chicken pot pie but I have a sick kid so we’re not having MIL and her BF over. The kids likely won’t eat it. They’ll probably have peanut butter Nutella sandwiches and a quesadilla (one hates peanut bitter). They’re 6 and 11 and will make it themselves.
The rule is that if you don’t like what dad made, you make your own.

So busy what’s on the menu? Did you make decision? Not yet. It’s only 4. I made chili two days ago and a chicken-based soup yesterday, so I don’t want to do another soup/stew. I’m out of gluten-free pasta, so can’t do any pastas. We almost always have crab for Christmas Eve and since it’s one of my favorite foods, I really want it. Nothing sounds good to me except crab lol I thought I had some pork chops in the freezer, but I must have used my last package. Sigh

I always have fixings on hand for pancakes and fruit. I also have frozen turkey broth and leftover frozen chicken. I could put together a soup. We have frozen tomatoes from the garden. Could defrost and make a quick sauce. We have frozen Meatballs from IKEA we could cook then make some pasta and throw together a salad.
