What to make for Christmas Eve dinner on no notice?

I can always whip up a rice bowl. So that's what I would do.
For dinner we had lamb steaks, french fries, Brussels sprouts, gravy and rolls with garlic butter.
On Thursday Dh let me know he was going mountain biking this morning. He sent out a text to the whole riding group, and 2 people responded. On the same text thread, Dh invited these 2 guys to come over afterwards and have beers and maybe bbq sausages.
I was a tiny bit annoyed, because I have a dinner I'm making and I wanted to get the stockings filled, presents wrapped, etc. and I don't need anything added to my list, as Dh is adding to my grocery list.
Late last night, all of the sudden everyone and their cousin's friend wants to ride and come over to my house for a bbq. IT'S CHRISTMAS EVE! Seriously, there were A LOT of stoked wives today as they got shit done. Why, because their husbands were at my house at 7:30am and left for a 3 hour ride while I figured out how to feed 11 guys. 😠😲😤 They then descended upon my house and stayed until 4pm.
Actually, 3 guys stayed for dinner, which turned out great, but could have been iffy as we had an older gentleman coming that Dh worked with for years, that comes to our house for Christmas Eve dinner every year, for years, just me, Dh , Ds, and our friend, and suddenly, without notice, there are 3 extra people, who've not had an opportunity to clean up from their 3 hour bike ride, that morning, and have been drinking since noon, staying for dinner. Don't get me wrong, I love these guys to bits, but...
Everything turned out better than I could have ever hoped for. After dinner, Ds' bestie and his mom, who is a really good friend of mine, came over and we all played Cards Against Humanity.😂 My cheeks are going to hurt so badly tomorrow. It's midnight, and I need to wrap presents, and fill stockings! 😈 And I'm grinning ear-to-ear.
If you're still reading, the game had Dh and I - late 50s, our friend - 72 male, who is still recovering from a broken neck back in August, Ds 21, his friend - 21, his mom - 52, biking buddy one - 54, who is like a brother, biking buddy two - 45, whom I've known for years, and like much better since he and his wife divorced. (I do like her), biking buddy three - 61, I've heard of this guy, but have never met him, and I think Dh only met him one time 5 or so years ago.
I would love to have a recording of us laughing and hooting, hollering and gufawing, cackling like cartoon hyenas, carrying on to the point people couldn't be understood thru the laughter. And ohhh the things I didn't need to know that Ds knows. 😊
