I love to cook and try new recipes, and I am also going to give eating whole food plant based a try. I love veggies and beans and fruit, but I tend to use them as side dishes, so I am going to try to incorporate them into entire meals. I have a pot of vegetarian chili simmering on the stove right now. It smells heavenly, and I hope it tastes as good as it smells. I love soup and make a lot of it during the winter months, but they tend to have meat in them. I will share the recipe when it is finished if it turns out tasty. Anyone else want to share anything healthy they make or have tried lately? Maybe we can keep this thread going.

Great thread, thanks for starting it! Most of my healthy recipes are from different paid-for programs I have done over the years, and there are strict rules about not sharing the recipes. I will have to search my stash to find some tried-and-true recipes that are not subject to these rules.

I wish that I could find the original site where I got this recipe, many years ago. It was on a weight loss / healthy meal website. I used to make it a lot, but had forgotten about it until my mum mentioned it to me last week. The best thing about this meal is how easy it is to make! Sticky ChickenThis particular site doesn't mention the number of calories, but I just calculated it and it works out to be about 270 calories per serve (plus whatever rice or veggies you had with it). This would depend on the size of the chicken thighs. You could get the calories lower if you used a lite peanut butter.

I can't eat dairy now, but I used to really love this with some homemade onion gravy. I also made my own version of dry onion soup mix - yay, no chemicals! www.allrecipes.com/recipe/25908/cottage-cheese-roast/I find it needs more baking time in my oven... around an hour I think.

That chicken sounds delicious. Do you boil the marinade to make a sauce, or toss it? Yes, you cook the sweet chilli sauce, soy sauce, and peanut butter in a saucepan then pour it onto the chicken to marinate for a couple of hours. It then gets cooked in the oven.

My chili turned out soooooo good! I love chili, and this is probably the best one I have ever made. And no meat in it! The recipe is long, but it's worth it. It made a lot, so I will freeze some, and I will be making this again. I combined two different recipes and made a few substitutions: Lentil and Bean Chili Seasoning Ingredients: Mix together: 1 TBSP Chile Powder, 1 TBSP Ancho Chili Powder, 2 tsp cumin, 1 1/2 tsp smoked paprika (recipe called for regular paprika, I had only smoked), 1 tsp dried oregano, 1/4 tsp cayenne pepper, 1 1/2 tsp kosher salt, 1/4 tsp black pepper Chili Ingredients: 2 cups chopped yellow sweet onion, 1 cup chopped bell pepper (I used red bell pepper), 1 cup chopped carrots, 1/2 cup chopped celery, 4 cloves minced garlic, 2 TBSP tomato paste, 28 ounce can crushed tomatoes (I used one 14.5 ounce can of tomato sauce and one 14.5 ounce can of petite diced tomatoes because that is what I had), 3-4 cups vegetable broth plus more for sautéing vegetables, 1 TBSP soy sauce (I left this out), 1 cup dried red lentils, rinsed and drained (I used regular lentils because that is what I had), 2-3 cans of beans (black beans, kidney beans, and/or cannellini beans) drained and rinsed ***I also added a diced, peeled sweet potato Toppings of your choice: avocado, jalapenos, sour cream, cheese In a large pot over medium heat, sauté celery, carrots and onion for 5 minutes in a bit of vegetable broth or olive oil (I used broth). Add in bell peppers, sweet potatoes and garlic, sauté for 10 minutes. Add tomato paste and seasoning mix, stir well to incorporate. Add tomato sauce and crushed tomatoes, broth, soy sauce and stir well. Turn heat heat to Medium High and bring to a boil. Stir in lentils and reduce heat to a simmer and cook, partially covered, 15-17 minutes are until lentils are tender. Stir in beans and cook additional 10 minutes. Serve with toppings of your choice. I didn't top it with anything, and it was delicious.

I made a vegetable soup tonight. It has carrots, yellow onion, leeks, celery, garlic, green beans, and white beans along with vegetable stock I made, thyme, parsley, rosemary, salt, and pepper.
Sometimes I add zucchini at the last 10 minutes or sliced cabbage. And I have added in roasted butternut squash before too cut into small chunks.

I love vegetable soup, and I always put cabbage in it. That is how my grandma always made it, and I always miss that if I forget to buy cabbage. Butternut squash sounds good in it too.

I didn’t use a recipe, but we had black bean and sweet potato tacos with mashed avocado last night. Boy was it good. I heated a can of black beans and mashed about half of them and added some spices (cumin, coriander, garlic salt). I roasted cubed sweet potatoes with olive oil, garlic salt, and lots of Aleppo pepper. Spread the black beans on a flour tortilla, added the sweet potato, and topped with avocado and a squeeze of lime.

I'm really into 'bowls' these days, they are so easy to switch out and adapt to what you have on hand. This is one of my favorites - tastesbetterfromscratch.com/buddha-bowl/I sometimes will add roasted chick peas, or black beans. We had chicken left over from the night before so I used that as my protein.

Hands down fave is this adapted version of Ottolenghi's cauliflower cake with a big salad. This Granola is great on salads, oatmeal, yogurt or just as a snack: minimalistbaker.com/aquafaba-granola-oil-free/We also love red beans and rice with tomato and mango salsa, buddha bowls, and Mark Bittman/NYT Mexican Chocolate Mousse as a special treat. I've modified the recipe to use dates as a sweetener and coco powder instead of melted chocolate. I can tell you the original recipe is awesome, my changes fit our needs better but omnis don't like it as much.

We have a great boss - he does cooking demos from his home for us once in a while and it is always something tasty and pretty healthy. The day after he does the demo, he brings in big batches so we can try it before we make it ourselves. A couple of weeks ago, he did a demo for Chicken Coconut Curry Soup (Slow Cooker Recipe). Here is a copy of it along with his notes to double the recipe. He said it came from " The Big Book of Keto Diet Cooking" by Jen Fisch Very easy and tasty!!

I love love love portobellas, so I will definitely be making that one! The other night, I made an easy vegan pot pie. I kind of made it up based on my favorite chicken pot pie recipe. I used mushrooms, broccoli, carrots, onions, peas and diced potatoes. Made a gravy by making a roux with a bit of butter and flour. I know, that's not really allowed, but I haven't yet bought a plant butter substitute. I only used like three tablespoons of butter in the whole thing. LOL Poured in some vegetable broth, garlic and thyme, let it simmer a bit then added some unflavored almond milk. Poured that over all the veggies in the pan. Covered it with a piece of puff pastry. It was so good, hearty and flavorful. Even my meat eating daughter loved it.

I have shared clean food dirty girl here before. While her main business is a pay subscription- she offers lots of freebies, too. Right now I am craving her quesadillas and I bought the ingredients. I will say- if you are into batch cooking and whole food eating, her subscription is amazing. She breaks everything down and even provides a shopping list. If I worked a wee bit less and had a bigger fridge, I would sign up again. I did get a new instant pot cookbook (living on a boat, the instant pot is my favorite thing) but I haven't tried anything in it yet.

iamkristinl16 - would you link me to your Pinterest boards? I'd love to follow you. I don't make this exact recipe, but this is my favorite soup! I sometimes sub chickpeas for the chicken, and add some carrots and celery. It's a very "c" ingredient soup. And I think I may love your boss!

I just made this and it was easy and good. Very Weight Watchers friendly as the oil is the only ingredient for which you need to count points. I added some chopped bell pepper because I had one that needed to be used up. Next time I’ll add more kale and a little more red pepper. We love this dish. I season it with Trader Joe's Cilanto Lime seasoning in addition to what she calls for. We always add extra veggies (mushrooms, chopped spinach, whatever we have on hand.) Skinnytaste Ground Turkey SkilletI like most all of the recipes on her site.

I keep bags of Trader Joe’s tricolor peppers and their spicy cauliflower rice. That way I can easily add black beans & any veggie I have to make burritos. If I have jalapeños I don’t add taco seasoning We like this recipe. joybauer.com/healthy-recipes/eggplant-parmesan/

We usually substitute chicken, and don’t use as much butter/oil. We also marinate them for longer than 20 minutes. DH used to start the proteins in the marinade, go do a swim workout and then come back to make the rest. Easy meal for a busy night. They’re also pretty good in place of spaghetti noodles when you have spaghetti. For us, no matter what we use them for, it’s important to salt them and let them sit there on a towel for 30 minutes and then wring out the water. Would love to see more recipes that use them!
