I'm 51 and just discovered today that I really like corned beef!
As a child I'd only had it as corned beef hash. From the can. I despised it. As an adult I've never made it or had it except the stuff in a can as dh loves it. But it grosses me out just to look at it so I haven't made it in years.
But we are having a late Christmas breakfast with some family members tomorrow and dh asked if I could make corned beef hash, but from scratch. Ok, I'll do that. So I bought and cooked a corned beef today to have it ready for the morning, and OMG I love it. I guess my bad experience with the nasty can stuff had soured me from it but I will definitely be making it again.
What have you tried as an adult after thinking you didn't like or hated it and turned out to love?

I can't think of anything for me off the top of my head, but I recently accidentally bought chunky peanut butter and now my DH is enamored with it. We both grew up eating smooth.

Corned beef is also one of mine. It has only been probably 5 years, but I am not boycotting it on St Patrick’s day anymore
Coleslaw is another that I have been much more open to. Although sweet coleslaw definitely is more of a favorite than a non sweet.
Beans. I have always pretty much hated beans. Like take the time to pick the kidney beans out of a chili hate beans. I have gotten to the point the I will do (and kind of like) refried beans with tacos or Mexican food and trying to like other bean and bean dishes. This one I really wish I could get past but it is harder than other foods I am trying to get to like.

I eat pretty much everything now (except offal and oysters) but there was lots I didn't or wouldn't eat as a child.
The last food I trained myself to like was olives, about 20+ years ago. Dad used to cook dinner for me once a week, and he would do a Greek salad. I started off by forcing down one quarter of a kalamata olive, then next week half, then next week a full one.... now I could eat a whole jar of them!
I also used to not like chicken thigh, but now it is my preferred cut.

cooked vegetables...my mum was not an inspired cook and wasn't a vegetable fan so we only ever had green beans (french cut frozen) or canned peas or corn or occasionally broccoli....all boiled until they were tasteless and nasty. In the spirit of teaching my children to like vegetables, I've learnt to cook many vegetables many different ways - and have learnt to like most of them along the way (not lima beans though...)
avocado was something I taught myself to like

Vegetables lol. Growing up I ate green beans, corn, peas and (only raw) carrots. Now the list that I eat is much MUCH longer and I especially love roasted/grilled veggies.
When Dh and I started dating, I ate broccoli but only raw. His mom served steamed broccoli at dinners a lot and I always took and ate a small amount to be polite. After a while it started tasting good.
Overall my palate is a lot broader as an adult. I grew up eating a lot of midwest/bland food and my mom didn't enjoy cooking. If cooking websites and Food Network had been a thing in my teens I might have branched out earlier.

So many processed vegetables aren't even be recognizable to people who grew up eating them fresh, and correctly prepared.

Ginger! I say it tastes like peppered lemons to me.
Fresh lime. I always hated the lime flavored Life Savers and Popsicles. Now I know I'm in for good tacos if there is fresh lime involved.
Cilantro is weird for me. I specifically remember it tasting like soap to me, but now I like it. Does that mean I like eating soap?!?!
And hummus and some beans.
I need to get to work on eating fish. I've always known it was good for you and I figured I could start eating it "later." Well. I'm unsure how much of "later" I have available to make enough difference!!!

Nothing comes to mind. I have always been one to try any food and usually like it.
My ex fiancé absolutely hated vegetables, or so he said. I eat a lot of vegetables so I figured we were going to have issues. I made him taste a roasted vegetable dish in a restaurant. The look on his face was incredible.
After asking lots of questions I learned that the only vegetables his mother ever served were canned vegetables. She just heated up a can of whatever and that was it. No seasoning them or even putting butter on things. No wonder he said he hated all vegetables! He realized he just hated canned vegetables!

Brussel sprouts. In small doses. Made by someone else not in my house. For some reason, brussel sprouts made by some of the breweries we go to are delicious vs the side dish at the regular restaurant.
Sweet potatoes. I'd replace 75% of all of our potatoes with sweet potatoes if I could.
Squash. Stuffed acorn squash is in the winter menu rotation.

Roasted Brussels sprouts. Mushrooms (except portobellos give me the heebie jeebies) and cauliflower. I just recently tried grilled octopus and it was pretty good.

Funny, I thought about starting a post like this this morning.
There are very few fruits and vegetables I won't eat. But one I could never wrap my taste buds around was pears. Currently in my house I have 2 kinds of apples, tangerines, bananas, and 2 pears that Ds wanted, but hadn't eaten before he left to go back to school.
I got my second shingles vaccine yesterday, and I hurt and feel crummy. Dh went up to help his mom with all the rain we are getting, so I was left to fend for myself. When I went to make breakfast, I saw the pears sitting there and decided to try one. I cut it up and for some reason I also grabbed a spoon and scooped out the flesh. IT WAS DELICIOUS! The second pear was a different type of pear, so I gave it a try as well. DELICIOUS! Turns out it's the skin I can't bear.
I like pears as of today!

Oysters. I've only been eating them about 10 years. I have tried them throughout the years as my Dad, brother and DH have always enjoyed them. I say Menopause caused my taste buds to change!

There were so many things I wouldn’t eat as a kid, but my mom made a lot of hot dish/casseroles with hamburger, chicken or tuna and those cream of crap combinations are blech to me. Now though I will eat artichokes, asparagus (especially roasted with Parmesan and olive oil, sooo good!), some kinds of fish (won’t eat sushi but my kid does), never liked Parmesan and now I do.
I will never like onions you can bite into but I’ll eat stuff that is onion or garlic flavored.
Speaking of corned beef, DH made it a few times and I didn’t really like it. The last time he made it he rinsed it before cooking it the way you’re supposed to and it was so much better and less salty that way.

I’d say over half the items I eat (which is almost everything) I started eating/liking as an adult.
I wasn’t ultra picky as a kid, but I didn’t eat fish, pork, seafood, most vegetables, etc… as a kid. I learned to like almost everything in my 20s. I’m trying to think of what my last revelation was. The only thing I can think of was learning that black puddings (blood sausage) was pretty good, but that was when I was 34 (I’m 50 now).

Dh and I think your tastebuds have to deaden in order for you to like strong flavored things like that. My gran used to say that. Soooo many veggies I didn't used to like! Peas, cabbage, cauliflower, etc. I remember wishing I could like the squash and tomatoes from my dad's garden - I loved the idea of it, but not the taste... until one day, I DID love the taste. Now, summer tomatoes are one of life's most exquisite pleasures to me. I still don't like nopales, and I wish I did!
