I'm just impressed with y'all who can make more than one meal in a week!
It's just DH, me, and our cat, so we make one big meal on Sundays, and then have that for M-F (or as long as it lasts) and then do steak and a side on Saturday nights (sweet potatoes or haluski, usually).

DH will be out of town for work most of the week. I’m bad about cooking just for myself. I do plan to make some spinach lasagna roll ups tomorrow and eat off of those for the next couple days. And I ordered a couple of prepared meals from H‑E‑B - one with shrimp and one with salmon. And then a couple of lean cuisines. This week is just about keeping up with my health goals while not wanting to cook much.

Here's how last week was planned, and how it turned out! Sunday: Beef Stew - Didn't even make it to the store. LOL I think we ate out.Monday: Chicken Gyros Didn't even make it to the store. We had Arby's
Tuesday: Soccer Party - Spaghetti Dinner - This went GREAT!Wednesday: Cheeseburger Casserole (DH make this). - Another NOPE - Ate at a friend's restaurant (we've been filling in and helping)Thursday: Meatball Subs (from leftover spaghetti meatballs and sauce) - Another NOPE - Ate at a friend's restaurant again.Friday: Soccer Party - Taco Bar - This went GREAT!Saturday: Leftovers, or take me out to eat! WE WILL SEE Here's my "plan" for this week:Sunday: Beef Stew - Let's try that again cause it still sounds good Monday: Chicken Gyros - Let's try that again cause it still sounds good Tuesday: Meatloaf and Mashed Potatoes (DH's Fave) Wednesday: Cheeseburger Casserole - DH makes this. Let's try that again cause it still sounds good and I'm not letting him off the hook. This week we will be having DIET food. Omg I have done nothing but sabotage myself. This week’s meals will include: Halibut or cod Chicken cordon bleu (keto) Beef stroganoff (keto) Spaghetti and meat sausage sans pasta avec dinde (turkey)
That is all I have come up with so far.

Sounds good! Is the horseradish mixed in? It is, both in the meat mixture and the sauce that goes on top.I've never been able to eat this! (Hominy and Lima Beans are my veggie kryptonite! LOL The sauce is so spicy, you don't even realize you're eating hominy. No idea which day will be what. Except that things that are quick to prepare or can be prepped in the morning for Tuesday and Wednesday when I teach classes in the late afternoon. Chicken stir fry with orange sauce, broccoli and rice Stuffed chicken breasts artichoke, spinach and cheese, angel hair pasta Italian beef with gardeners and fries Filets, baked potato, asparagus Sausage and tortellini soup and sandwiches We'll see if we get through them all or give up and get take out on busy/long days. Well, I ended up making only 2 of the 5. The stir fry and the steaks. Neither were overwhelmingly winners. I will keep italian beefs with fries, and stuffed chicken breasts on the list. I will add pork loin with pasta as a side. And possibly chicken with wild rice soup. I have an outpatient procedure on Thurs and will likely not feel much like cooking or even eating myself.

It's still saturday here...we have the conversation re the weeks meals on sunday... Looks like sunday will be clean the fridge...there is shepherds pie and Tuscan sausage and bean stew leftover from earlier in the week...DH also has 1/2 of his ribeye left from the other day...

Well, I cooked oven-roasted chicken thighs with herbed potatoes today, so the leftovers will be used one day this week. I think so far this week looks like:
Sunday: sausage & peppers for me; leftover beef stroganoff for DH Monday: cheesesteaks Tuesday: leftover Sunday chicken & potatoes Wednesday: cheese ravioli with marinara Thursday: leftovers of ?? Friday: penne with sausage & mushroom sauce Saturday: ?? takeout? or whatever I get that looks good on Saturday Costco run LOL

Chicken? Cheesesteak? I haven't decided what to stuff them with yet, lol!) Thursday: Cauliflower Zuppa Toscana Friday: Air fryer fish sandwiches & coleslaw Saturday: leftovers
ETA: DH & I eat keto/low carb most of the time so usually these recipes are modified but you get the general idea, lol! No rice, almond flour, etc.

Not sure what order everything will be in. Will add veggies or salad as needed.

I'm a mess this week. I made a half plan, then made a last-minute decision to stop by the new HEB*, and then deeply regretted that decision because it was absolute chaos, so I mostly abandoned all plans because I didn't want to deal with the craziness but picked up a handful of ready-to-cook meals there. And then when I got home I remembered that I leave for a conference on Wednesday so DH will be on his own and I bought too much food. Anyway...
Sun: Green Chili Stew (I actually made this in the crockpot and it was delish!)
Mon: Steak and goat cheese pinwheels with a salad (ready-to-cook from the store, good but very rich)
Tues: Chicken Monterrey with roasted veggies (ready-to-cook)
Wed: Chicken Poblano Pasta for DH (ready-to-cook), I had some other kind of roasted chicken, but I guess DH can do that Thursday and I'll probably order room service while I work.
Thurs: Some kind of fancy dinner on someone else's dime
Fri: I'm traveling and DH is on his own.
Sat: The French Onion Soup I bought ingredients for and intended earlier in the week
*For you non-Texans, HEB is a super popular grocery chain that's been in central (and South?) Texas forever and has just made its way to North Texas and people are going crazy for it. I would rather stab myself in the eye than deal with the crowds again.
