I had a thought today as I perused AKathy's "What's For Dinner?" thread ... I really needed to get back to weekly meal planning. I have been making too many trips to the store, eating out too much, junk food, and tossing too many perishables!
I always need meal ideas, so, perhaps others can share their meal plans (or jump in and make one too!). I'm only doing dinners. It's fend for yourself for breakfast and no one is home for lunch. ;-)
Today, I was struggling at first to plan and then my week kinda fell together because my high school senior DD has some soccer team bonding stuff this week and we are hosting. :-)
Here's my incredibly fluid plan for this next week:
Sunday: Beef Stew
Monday: Chicken Gyros
Tuesday: Soccer Party - Spaghetti Dinner
Wednesday: Cheeseburger Casserole (DH make this).
Thursday: Meatball Subs (from leftover spaghetti meatballs and sauce)
Friday: Soccer Party - Taco Bar
Saturday: Leftovers, or take me out to eat!

we shop on Wednesday so
Thurs - fried chicken from kfc - because the turkey didn't thaw in time, lol Fri - turkey, roast potatoes, stuffing, mixed veg Sat - leftovers Sun - turkey curry Mon -leftover curry Tues - pancakes and bacon Wed - tomato soup and goldfish

Made my menu and placed my grocery order today.
Tonight: skillet roasted potatoes loaded with sautéed broccoli and mushrooms and a little bacon and cheese. Sunday: carnitas (shredded pork tacos), butter lettuce salad with avocado and pico de gallo. Monday (meatless): skillet roasted carrots with maple breadcrumbs; quinoa pilaf with spinach, pistachios, and dried cranberries. Tuesday: brown rice bowls with leftover shredded pork, edamame, cucumber, and soy-ginger dressing. Wednesday (meatless): butternut squash and black bean enchiladas with citrusy slaw Thursday (meatless): omelets and fruit salad Friday we go out with friends

Chicken coconut curry (crockpot) Cioppino (Using a can of Progresso Manhattan clam chowder as base and adding fish, shrimp and seasonings) Leftovers Lentil and Chunky Tomato Chili Salmon, Broccoli and Rice BBQ bowls Leftovers Pasta and meatballs

Monday: lemon, rosemary, garlic chicken; roast pumpkin; broccoli with lemon & garlic (all oven-baked)
Tuesday: pork with spinach, leek and mushroom sauce; beetroot. (Pork in benchtop griller, sauce on stove-top)
Wednesday: Mongolian sticky beef, Pearl couscous with vegetable salad, frozen peas (pressure cooker & stove-top)
Thursday: Fake ‘n bake pork chops, roast pumpkin, green beans, and feta salad (pork & pumpkin oven-baked)
Friday: slow cooker corned beef; basic green salad with cranberries & nuts
Saturday: left over corned beef, mashed potato, beetroot, walnut & feta salad
Sunday: moroccan-spiced lamb; apricot salsa, spinach catalan. (Lamb sautéed, spinach in saucepan)

They use to list meal planning in the dinner thread, but think people start out with a great plan to do a meal plan, then it fizzles out because life gets busy.
Sunday - Pizza Monday - BBQ pulled pork and hot links; potato salad. slaw and green beans Tuesday - Scrambled eggs with cheese; pancakes and bacon Wednesday - Popeyes chicken tenders; slaw, red beans & rice Thursday - Pitasfilled with various meats, veggies, cheeses; chips Friday - Hamburgers with grilled onion and peppers; jalapeno poppers Saturday - Omelettes with ham, veggies and cheese; hash browns and biscuits

DH does our main grocery shop on Saturdays, so our 'meal week' starts then. This coming week I will be on my own Tu/We/Th, and there will be more meat-free meals, due to Ash Wednesday and Lent starting.
Saturday - stuffed eggplants (veggie) Sunday - Chicken Biryani Monday - lamb kofta with salad and pita bread Tuesday - LO Lasagne from the freezer Wednesday - Okonomyaki - Japanese vegetable pancake, possibly with prawns Thursday - something else I find in the freezer Friday - Fish and Chips
Weeks like this are always a bit flexible, due to me tending to cook too much when I cook just for one, so lots of leftovers. We tend to have fish most Fridays - a hangover from growing up Catholic in the days when that was the way it was. We both like fish, and it works for me to have a set day to make it. We also try to have at least one vegetarian meal each week.

That's as much planning as I've done after my shopping trip yesterday. I also find more food waste if I plan too much, so I prefer to do a few days at a time now that we're empty nesters.

We are having: Sunday- Filet, lobster tails, au gratin potatoes, and steamed broccoli Monday- Italian Sausage, pepper, onion subs Tuesday- Grilled Smoked Sausage. Pierogi, corn Wednesday- Spaghetti and Meatballs (sauce and meatballs from freezer) Thursday- Chili (leftover from freezer)
Since we got our new fridge and have cleaned out the deep freeze, I can actually see what we have and plan around those things.
Oh, and Friday we eat out, rotating whose choice it is. This week is my choice.

Our tentative menu for the week of 1/20……….
Monday - Cheeseburgers & Salad. Tuesday - Out to eat for Fat Tuesday Celebration. Ash Wednesday - Homemade Mac & Cheese. Thursday - Omelette w/onions & cheese. Friday - Italian hero bread w/Salami & Cheese & Salad. Saturday - Lasagne w/meatballs & sausage. Sunday - Leftover Lasagne.

This is my week 4 of doing weekly menu planning...It is definitely helping me...as opposed to flying by the seat of my pants. Monday...WW shepherds pie Tuesday.. WW Chicken in a lemon caper sauce...need to figure sides with that Wednesday...Take out salads from our favorite place.. Thursday...WW tuscan sausage and bean stew Friday... is fish day...ALWAYS😊😊😊

No idea which day will be what. Except that things that are quick to prepare or can be prepped in the morning for Tuesday and Wednesday when I teach classes in the late afternoon.
Chicken stir fry with orange sauce, broccoli and rice Stuffed chicken breasts artichoke, spinach and cheese, angel hair pasta Italian beef with gardeners and fries Filets, baked potato, asparagus Sausage and tortellini soup and sandwiches
We'll see if we get through them all or give up and get take out on busy/long days.

I have really struggled with this lately. I get home from work immediately start on homework, I don't have the time and energy to devote to cooking like I used to. But this thread is giving me a push this week. My extremely loose plans are:
Sunday: Salmon & potato wedges Monday: Chicken stir fry with broccoli & snow peas from the garden Tuesday: Tortellini Soup (I freeze batches of soup in individual portions for easy lunches and dinners) Wednesday: Tilapia & some kind of veggie Thursday: Leftovers Friday: Pizza night Saturday: Pork roast

So far I have planned…. Million dollar chicken, scalloped potatoes and pea salad tonight.
Smoked sausage and potatoes baked with probably zucchini on the side.
Swedish meatballs, egg noodles and roasted edamame salad
Thursdays are always Mexican restaurant night cause I work late.
Friday is a crop night so I’ll eat whatever takeout we order.

DH does the cooking and I do the grocery shopping. He only makes 2 meals for the work week because of our crazy schedules and we eat them throughout the week. Luckily no one here is picky about leftovers and he has a culinary background so he is used to cooking in larger quantities.
He made pork tenderloin and scalloped potatoes. We will add various vegetables, salad, etc to make it a full meal. He also made beef stew. Friday we will eat out because we have a school function and Saturday will be something quick and easy from the freezer/pantry.
