We get together with extended family on Christmas Eve and do the white elephant thing. Everyone brings a dish or two. Over the past few years it's starting to be more Mexican or Tex/Mex food.
Anyone have any good/easy Mexican appetizers or finger foods?

COWBOY CAVIAR First Bowl 2-TBS Red Wine Vingar 2-tsp Olive Oil (oops I did it with 2-TBS) 1/2-Lime squeeze juice 1/4-tsp ground Cumin 1-Clove garlic, mashed pressed or choppen finely. Salt and Pepper, Tapatio to taste. MIX THE ABOVE. add. 1 Avacado fold them in. Second Bowl 15 oz can.black eye peas (If double2types of beans, black-eyepeas) 1/2 onion chopped. 1-Cup frozen corn. 1/2 bunch chopped cilantro 1-2 Tomatoes chopped Mix them together

I do a tortilla roll with cream cheese, grated cheese, chopped peppers, onions and cilantro. Sometimes I slice and bake them until they are bubbly and sometimes I don't. I serve it with salsa, guac and sour cream. It's not really tex mex, but it has the flavours of it.

This is how we make poppers now. Very easy and a little healthier than frying. We love them and make them often. They disappear quickly.
Cut jalapeno peppers in half and remove seeds (wear gloves and do not touch your eyes or nose!). Par boil them about 5-10 minutes to soften them slightly. Drain on paper towels cut side down.
Mix together: cream cheese, softened finely shredded colby-jack or sharp cheddar a little shredded parmesan cheese a little onion powder or minced onion (dehydrated will work also) a little chipolte chili powder
Spread into jalapeno halves. Sprinkle tops with panko bread crumbs and drizzle a tiny bit of olive oil over top.
Bake at 425-450 for 10-15 minutes until tops are brown.

One of the easiest "dips" I've made is to mix softened cream cheese with salsa (from a jar). That's it. Be sure it sits out a bit before serving. It is pretty addictive.
Jalapeno popper dip is also popular and simple enough to make.

The Pioneer Woman makes a jalapeño popper wrapped in bacon and baked. It's just a half a jalapeño with a spoonful of cream cheese. Wrap with 1/3 slice of bacon and secure with a toothpick. Bake on a rack for 20-25 minutes at 375.

I make a super easy layered dip. Soften a block of cream cheese. Spread in dish and heat in microwave. Top with a can of refried beans and heat in microwave. Spread over the top of cream cheese. Add a small can of diced green chiles. Spread. Top with grated cheddar cheese or cheese of choice. Melt. Serve with tortilla chips. I may or may not have eaten this for dinner before.  Lisa

On another thread I posted a Tex Mex version my friend from San Antonio always makes that I just love: refried beans from a can spread out in a baking dish, then salsa (preferably Pace) and then shredded cheese on top. Serve with tortilla chips. Now you know I'm sure the traditional Tex-Mex Christmas Eve meal is tamales, so make a tamale pie.

Here is a jalapeno popper recipe that everyone always seems to like and asks me to make over and over.
1 (8 ounce) package cream cheese, softened 1 (8 ounce) package shredded sharp Cheddar cheese 15 fresh jalapeno peppers, halved lengthwise and seeded 2 eggs, beaten 1/2 tablespoon milk 1 1/2 cups crushed corn flake cereal
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking sheet. In a medium bowl, mix together cream cheese and sharp Cheddar cheese. Stuff jalapeno halves with the mixture. Whisk together eggs and milk in a small bowl. Place crushed corn flake cereal in a separate small bowl. Dip each stuffed jalapeno half into the egg and milk mixture, then roll in corn flake cereal to coat. Arrange in a single layer on the prepared baking sheet. Bake in the preheated oven 30 minutes, or until filling is bubbly and lightly browned.
Note: I stuff the jalapenos and put them in the fridge so they are very cold. When I am ready to bake, I mix up the egg and milk mixture, roll in corn flakes and bake. By putting them in the fridge for a while, the cheese doesn't completely melt out of the jalapeno while baking.
Also, the original recipe had mayo in the cheese mixture. I accidentally forgot the mayo once and really liked it better so I no longer include it in the instructions when providing the recipe.

Yum, these all sound delicious. I'm planning on having appetizers/finger foods for my Christmas gathering on the 27th and all of these sound perfect. I've been craving poppers and taquidos.
I know my FIL and MIL are going to freak over not having a sit down meal but my DH "volunteered" our house so it will be what I feel will make it a nice and carefree gathering so that I may enjoy myself a bit instead of doing so much cooking and cleaning.

OK rodeomom, penny, and anyone else who wants a little (well, a lot) of salsa --- I'm completely over being the holder of the "secret" salsa recipe, so I am sharing it here for all: 6 cans whole tomatoes 6 roma tomatoes, fresh 4 large garden tomatoes 1 small can tomato paste 1 can mild chopped green chilis 1 jar minced garlic 1 large red onion 1 T lemon juice 1 T lime juice Cajun spice, to taste. Cilantro, optional Drain 6 cans of whole tomatoes, blend with 1 can tomato paste in blender. Dice all garden and roma tomatoes; mix with blended stuff in large bowl. Mix in garlic and chilis. Chop onion; add to mixture. Add remaining ingredients. Chill for at least 30 minutes before serving. Allowing to sit overnight will make salsa hotter. You can use medium or hot chilis instead of mild, but you control the "heat" through the amount of Cajun spice. **This is really, really good right away and awesome if it sits overnight --- but also a lot hotter! You control the amount of "hot" with the Cajun spice, so add/taste, add/taste, add/taste. The recipe is sooo simple but really amazing. The ingredients above make a ton; basically a large metal mixing bowl full. I've never had any luck cutting the recipe down, but better cooks than me likely could. Fights have started and friendships have been tested over this recipe. It's that good. Enjoy!
