Key Lime Pie 1 can sweetened condensed milk (prefer Eagle Brand) 4 egg yolks 4 oz. key lime juice (Nellie & Joe's is best if you can find it) 1 graham cracker pie shell
1. Combine milk and egg yolks, mix well.
2. Slowly add juice, mix until well blended.
3. Pour into graham cracker pie shell.
4. Bake at 350 for 12-15 minutes.
5. Refrigerate until ready to serve.
Note: While you can use regular lime juice, it is worth it to buy Key Lime Juice if possible. It is a bit more tart and tastes a bit better IMO. I also recommend you just mix by hand, not with a mixer.
In the past I've always used the premade shells, but no more. I was trying to use up some graham crackers recently and decided to make my own pie shell. Game Changer!!! Really elevates the pie even more. Here is the recipe I use for that:
Graham Cracker Crust 1 1/2 cups graham cracker crumbs 1/3 cup butter, melted 1/3 cup sugar
1. Preheat oven to 350°F. 2. Mix all ingredients together and press evenly in pie plate. 3. Bake for 8 to 10 minutes; cool and fill.
