I don't often get grocery store rotisserie chickens but when I do I usually freeze the leftover meat to use in soups in the winter. Yesterday I bought a chicken at Sam's Club and I don't have a lot of space in the freeze to keep the leftover meat for several months until it's soup weather. So what do you make with leftover rotisserie chicken?

There are so many things to make. Chicken salad, tacos, chicken pot pie. You can add it to a salad for protein.

chicken spaghetti fettuccine alfredo with chicken & broccoli chicken caesar salad shepherds pie with chicken instead of beef
basically any casserole or pasta that you would put chicken in

I shred it and coat it with bbq sauce. Warm it up and add white cheddar cheese and coleslaw for BBQ tacos.

I have most of the chicken left over. I've wondered about using it in casserole type recipes because it seems like the flavors already on the chicken might not be right. But a lot of what you guys have posted sounds good!

We use it to “sweeten” the dog’s bowl. My dog isn’t food motivated at all so he pretty much only eats a good meal every 2 or 3 days (he’s fine, I promise all of you - he’s a healthy weight and his vet says he’s fine; he eats when he’s hungry); but he does like rotisserie chicken so usually he’ll eat his whole dinner if we add rotisserie chicken breast.

Google Pioneer Woman Chicken Spaghetti. Use the Food Network version, not the older one on her blog. My sister is so happy when I make this, she practically cries. Use boxed chicken stock (you can add some to the pasta water for more flavor). Yes, it uses cream of mushroom soup. So sue me.

I found a sugar free barbecue sauce at Costco that is really delicious. When I buy a rotisserie chicken at Costco, I get a bottle of the barbecue sauce and some of their artisan rolls that are stocked near the fresh vegetable section instead of the bread area.
I always pull the meat off the chicken when I bring it home because it is so much easier to do when still warm. I usually eat the plain chicken with a vegetable that first night, then take the remaining chicken and separate it into two piles. The smaller pile gets chopped very fine and gets put into small ziplock baggies to add to my pup’s dinners. I keep them in the freezer door for easy access and transfer one to the refrigerator when I give him his morning meal. That way it is pretty much thawed out to be added to his freeze dried cubes for his dinner.
The larger pile gets shredded instead of chopped and put into a lidded bowl with barbecue sauce poured over it. I will have sandwiches from this for the next couple of days. I find it tastes best if you add the sauce that first night to allow it to fully marinade the cooked chicken. I’m sure any brand of barbecue sauce would work, I just use the sugar free because I tested prediabetic last year. Plus, it is really good!

I know what you mean about the flavor. We use leftover for chicken caesar wraps, quesadillas, chicken and broccoli alfredo, and on salads.

Take the rest of the chicken off it, dice it , then and put it in the fridge.
For lunch or dinner or both, I would butter and lightly toast a flour tortilla (or two if they are the street taco size) and make myself a chicken wrap or two.

We mostly just make two days meals out of it. Sometimes I use it for chicken salad. Our local grocer has 2 sizes so I always buy the smaller chicken which is perfect for us.

Ok years ago I tried the Pioneer Woman chicken spaghetti recipe and it was terrible. I loved the concept of it though. If the food network version is better I'll give it another shot. I always pull the meat off the chicken when I bring it home because it is so much easier to do when still warm. I am kicking myself for being lazy last night and not doing it. I knew it was easier but I was so dang tired.

In the summer I make it into chicken salad, asian chicken salad, on top of a Caesar salad. In the fall and winter I make chicken pot pie, stir fry/chicken fried rice or soup. Now that our Costco sells rotisserie chicken breast meat already pulled off the bones in three pound packs, we buy that a lot for making all of this stuff without the mess of dealing with the whole chicken. I chop it up into bite sized pieces right away and can use it for 3-4 meals.

Maybe you did get a bad one, we’ve liked it. I’m pretty sure it’s the breast meat from the rotisserie chickens that didn’t sell, so I’m sure it has to be cooked through. I think they use a lot of the dark meat from the unsold chickens in their house made ready to eat salads, soups, chicken pot pies, etc.

I divide it into 2 pouched and use my FoodSaver to get them ready for the freezer. I usually make one of two things: Chicken Noodle soup or Chinese Chicken salad. I have, on occasion, also made Chicken Divan.

I love love love this Southwest Chicken Salad. I use Greek yogurt in place of mayo, and have made it without the lemon juice.
3 cups shredded cooked chicken ▢2 (4-ounce) cans diced green chiles, drained ▢1 cup shredded cheddar cheese ▢2 scallions, thinly sliced ▢1 rib celery, diced ▢1 clove garlic, minced ▢1/2 cup mayonnaise ▢2 tablespoons sour cream ▢1 tablespoon fresh lemon juice ▢1/4 teaspoon ground cayenne ▢salt and pepper, to taste INSTRUCTIONS Make Dressing: Stir garlic, mayonnaise, sour cream, lemon juice, and cayenne in large mixing bowl until well-mixed. Toss Salad: Add diced chiles, cheddar cheese, scallions, and celery to same mixing bowl, and stir until well-mixed. Lastly, add shredded chicken to mixing bowl, and toss until chicken is well-distributed and evenly coated with dressing. Taste & Serve: Season with salt and pepper to taste, and add more cayenne for a spicier kick. Serve (Note 5) or save for later (Note 6).
