I came across this recipe on Facebook recently, and I have made it twice in the last month. It is SO GOOD. Creamy Spinach and Mushroom Gnocchi (One-Pan, 20 Minutes)I have also been out to dinner twice in a week, and I ordered the same gnocchi dish both times. It was house made gnocchi, so big rustic gnocchi, with pumpkin puree, chargrilled brocolini and asparagus, confit garlic, pine nuts, shaved parmesan. It was so incredibly good. I want to try making it at home so that I don't have to drive 40 minutes every week to have it haha! Here is a photo of it.

The mushroom spinach gnocchi you posted looks good too. If only I didn’t have anti-mushroom people in my house.

What can be done to stop gnocchi being claggy (dense, sticky) ? The only one I’ve found that I like is by Rana. It’s stuffed with mozarella and you pan fry it to crisp up the outside. So it’s not really like gnocchi at all!

So it’s not really like gnocchi at all! Up until recently (as in the last month!) I wouldn't eat gnocchi because it's usually gluggy. When I wanted to try the recipe I posted above, I went to an Italian deli and bought some good quality gnocchi, rather than the one from the supermarket. So in my very novice opinion, I think it comes down to the quality. And don't overcook it.

I think the secret is to find a good quality, Italian deli or restaurant or store where you can buy them.

The restaurant near us called "Gnocchi" has a sampler of gnocchi with 3 diff sauces- marinara, alfredo, and a mix of those 2 sauces, which is my favorite

I roast up a bunch of veggies with Italian seasonings, combine that with the gnocchi, some Parmesan cheese, and sometimes a little butter and whatever juices are release by the veggies.
