Spin off from the fruitcake poll...I didn't want any replies to get lost there. Someone in that thread said that the reason Americans don't like fruitcake is because it's not sweet and we do like our sweet things. The second part is true but I don't think that's the real reason we don't like fruitcake... I think it's that we've never had the real thing. I would love to try making one, but I need a real recipe, that will produce a real fruitcake. Is that possible with American ingredients? Also, I don't want mine with marzipan or icing, just the fruitcake part. Do you have a recipe to share? Yes I could google, but how do I know it's a good one when I'm one of the ones who thinks I hate fruitcake?

This is the recipe my DDiL's mum gave to me, just before we moved to Munich. It has almonds as a decorative topping, rather than icing, which is what I prefer too. It is in metric, as that is what we use in Australia, though the fruit and flour are measured in cups and spices in teaspoons.
Rich Fruit Cake
Ingredients: 3 ¼ cups sultanas 1 ½ cups Raisins (chopped) ¾ cup currants 2/3 cup Glace cherries (chopped) 125g Glace pineapple (chopped) 125 ml rum (brandy or whiskey work too) 2TB marmalade ¼ cup orange juice 250g softened butter (or margarine) 1 cup brown sugar 1 teaspoon each grated orange and lemon rind 4 eggs 2 teaspoons mixed spice 2 cups plain flour ¼ cup extra rum (or other as before) 1 cup blanched almonds
Method:
Combine all the dried/glace fruits, juice, marmalade and rum in a large bowl. Mix well and allow to marinate overnight.
Preheat oven to 130°C Line a deep 8 or 9” cake tin with 2 layers of brown paper and 1 of baking paper.
Beat the butter, sugar and rinds in a small bowl. Add eggs one at a time, and continue to mix well. Add this to the fruit mixture Sift flour and spices and mix into fruit. NOTE: This needs to be done with a wooden spoon – a mixer won’t work here. Pour mixture into prepared cake tin, and smooth evenly Decorate top with almonds
Bake uncovered for 3 – 3 ½ hours, or until cooked. A skewer inserted in the cake will be just moist. Brush top with extra rum. Wrap tightly in a teatowel (dishcloth) and leave overnight. Store in an airtight tin.

This is Mary Berry's recipe, quite similar to that of my mum, except for the treacle. You need to double line the cake tin with a collar going above the lip of the tin to help even cooking. I have also seen Pumpkin Pie spice suggested as a substitute, and I used Lebkuchen spice sometimes here in Germany, when I ran out proper mixed spice - it has a bit more ginger in it though.

I mean, you can't beat Mary Berry but this is a recipe from another Brit, Kirstie Allsop. A friend from work made each of us a mini cake years ago, and it was sooooo good! I just asked her about it, and she told me it was this recipe: Caribbean Christmas Cake. It's not exactly traditional because it has ginger in it, and my friend also put pineapple in it. I'm going to make one this year, and I will include macadamias in with the mixed nuts. (Sorry for linking you to the Daily Fail but it's the only link I could find.)

I made my fruitcake today, from the recipe I posted earlier. Mixed and ready for the oven Out of the oven and basted with extra brandy My kitchen smells amazing from the spices and brandy. Now to wait until Christmas to cut into it.

I cheat and order THE best fruitcake. I get the individually wrapped slices. They keep forever in the freezer, and taste best when chilled, but even my kids love these! I just ordered several to use as Christmas gifts. Baked in Beatrice, Nebraska. Grandma's Bake Shop
