Can any of you help me find paper like this:
Without the print.
We bought some a few years ago at a national park and it's all been used and I can't find what I'm looking for on Amazon.
It was not very thick (thicker than printer paper, not as thick as card stock). It didn't have perfect edges, meaning it wasn't exactly "square." It was shaped like a rectangle. It felt crinkly, if that makes any sense. I don't think it was handmade but it had real color, the aged look wasn't printed on.
It really felt like that parchment stuff you get historical documents on when you visit them in DC.
It also wasn't exactly 8.5 X 11. It was smaller.
This is really close but I don't need the quill or jar:

on amazon or etsy search coffee dyed paper; aged paper; antique paper. quite a few options come up; hopefully one will work.

In addition to do-it-yourself with inks, crumpling, etc., a couple suggestions from a quick Google search for "parchment scrapbook paper:" Antiqued Parchment PaperParchment Cardstock PaperSince both are from HL, it may also be available in store (M-Sa; if you have one locally) so you can verify the color/texture/etc. HTH.
