I am trying to reduce the amount of meat that I consume for a couple of reasons. I successfully quit beef years ago but I am finding it really hard to give up chicken and fish. I recently decided to start replacing those items as often as I can rather than try to go totally without with the goal of continually reducing them until I can quit more easily. Or if not quit all together, at least I will be consuming a fraction of what I once ate.
To do this, I decided to give tofu another try. Previous recipes with tofu were just awful. But I recently learned that pressing it gave me a texture so much more like meat and coating it with a bit of cornstarch before baking made it super crispy. All I need now is a variety of marinades and sauces to keep it interesting. The first batch I made was lightly marinaded in tamari and olive oil and then baked in the oven. This was after pressing it in a gadget that I ordered from Amazon. The tofu was crispy, the texture was perfect, and the flavor was really good.
My next attempt was to use the orange sauce recipe that I have used with orange chicken in the past. I didn’t marinade it this time, I just made the orange sauce and poured it over a tofu, rice, and broccoli mixture. It was delicious and I could completely give up orange chicken and make this instead. It also reduced the amount of oil in the dish.
So does anyone have any recipe for tofu or any tricks in how you make it that you would like to share? I am happy with baking it rather than deep frying, but would like suggestions on different flavors to try. I mean the orange tofu was amazing, but I am sure that will not be something that I want to eat a couple of times a week. Oh, and I do have a cast iron wok that I can use for vegetables, but first I need to find somewhere around me that carries a better variety like fresh pea pods. I don’t have my garden set up yet so I need to purchase everything, but the grocery stores near me seem to be very limited. There was a big Asian population near my old neighborhood so I had access to a big variety of vegetables in my regular grocery store as well as several Asian groceries near by. I haven’t found that here yet.
