I have my regular ATG gun that I have had for years. Then as a backup I use the little square tabs. Now that I am branching out a little bit and watching some videos it appears that everyone is using some kind of glue? Comes in a bottle with a very fine tip. I can't seem to figure it out.. but it is used on paper and apparently it doesn't wrinkle. I'm thinking this is more economical than the refills and tabs. Usually their bottles are upside down.

There is a Bear or Bearly something or other glue that I see a lot of crafters use. That may not be the name but it's close. ETA: Just looked Bearly Art. It has a fine tip top.
I use a fine tip applicator bottle and just use the Scotch Quick Dry in there.

I'm not sure if it's the Bearly Art glue or another one. I don't think I've heard people say BA doesn't wrinkle, but I'm into cardmaking where that isn't so much of an issue. Actually I have seen some wrinkling or lines where the glue was applied on thin paper so I don't think it would be BA glue that they're recommending.
Fine tip bottles are extremely helpful for what I do and liquid glue is much better value than most tapes. Bearly Art glue comes in a giant refill bottle that's quite cost effective compared to other glues. But it's quite a thin watery glue and I'm not sure it would suit what you're doing. I've also heard raves about Art Glitter Glue, Craft Tacky Glue, and Multi Medium Matte is very popular with mixed media makers.
Can you link to any of the makers you saw using it? We can probably recognize the bottle.

I just feel like I am stepping into other people's conversations.. as they are usually in the middle of talking about who knows what. let me see if I can catch one I normally see...

I don't watch TikTok (& would have no way of knowing which specific videos you viewed) nor use liquid glue, but Nuvo Deluxe Adhesive seems popular.

I have used Bearly Art, Art Glitter and Nuvo glues and love all of them. As much as I swore up and down I would NEVER support My Sweet Petunia, I received the Precision Glue Press as a gift and I love, love, love it! I went to a weekend retreat and didn't even take my tape runner out of my bag. I used my glue press with Nuvo glue the entire weekend.

Well her bottle is plain… she was in the middle of some epic story so I didn’t jump in

I’ve purchased liquid glue from the art store and then transferred some into a smaller bottle with a metal fine tip. I still like my squares. They’ve held up over time.

The mystery deepens!

I use a fine tip applicator bottle and just use the Scotch Quick Dry in there. Scotch Quick Dry was my go-to glue for many many years. when it got more expensive, i switched to Aileene's quick dry tacky glue. Aileene's is vitually the same and so much cheaper. i put that in a fine tip applicator too. if it gets a little too thick, i add a dab of water, shake it up, and it flows better without affecting the adhesive strength.

Does she fill her own bottle cause that looks like cake decorating things my kids have. I usually use bearly but typically for fine detail things. I still prefer my atg and tape runner side the bulk of things.

I use Lineco glue, which I get from Amazon, and empty glue bottles with a fine tip and really good pin closure cap that I get from Karen Burniston. It works really well for me.
I still use tape for larger surfaces, but for smaller items being glued, I use the glue bottle filled with Lineco glue. I keep a damp paper towel in the bottom of a cup, and keep the bottle unstopped/uncapped, upside down on the damp paper towel while working on a project. Once I’m done, I put the pin/cap on and put the glue away. I just dampen the paper towel before I start crafting the next time.

Maybe use this for the fine things and my other normal stuff for bigger items.

Those are also my two go-to glues. Scotch Quick Dry is the thinner of the two and sets up very fast, as you'd expect from the name. I use it for structural stuff, especially box building. Of the various PVA glues I've tested, it's the only one that's waterproof and fully clear when dry.
For situations where I need some working time I go with Aleene's Tacky Glue. It's the most economical glue I've found. Slight reactivation with water, dries milky and less shiny.
The most important factor in getting your paper to not wrinkle is stop using so much glue. You need tiny amounts everywhere, not a big 'ol goopy line. I cringe every time I watch a Jennifer McGuire video because she just slathers it on like a burger condiment, ugh. If you don't have the patience or dexterity for that kind of application, use a glue sponge.

A lot of people used to use Art Glitter Glue with the fine tip. But it couldn't be shipped in winter because it was degraded by cold temps. Then Bearly Arts Glue came out and isn't affected by temperature. Everyone switched. I use Bearly Arts for fine die cuts and when I need a strong adhesive on stitched edge dies (they pop up with ATG tape).
