Good morning. Well, I'm far less cranky today. Not sure what I want to to do today, but I'll figure it out as the day goes on. Yds and his gf will be here on Friday and I do need to get his room ready. He's going to the wedding of a friend he's had since middle school. When your kid's friends start to get married then it really hits that they're grown ups. Ods will be coming home, as well. Yay. Full house! My happy place.
I'm making lamb chops for dinner.
What's on your menu?
What is everyone up to today?
May today bring happiness to all!

Yay for having your ds's at home soon scrapmaven! I took today off ... I'm feeling the need ... I'm having pain in my left foot so I'll see if I can get in to see my doctor ... it's also supposed to rain all day which is depressing. . (Calgary gets the most sunshine per year of any city in Canada ... we're spoiled!) I plan to do not much today ... big surprise! Dinner will be veggie fajitas ... yum!

Good evening. The weather here today has been crazy - cool and drizzling rain this morning, sunshine at lunchtime, then a massive downpour at 2:30 that only lasted 15 minutes, and now we’re back to bright sunshine. I went out mid morning for a nail appointment - that was when the drizzling rain started - then walked home via the butcher and the grocery store. Once home, I put meat into the slow cooker for dinner. Apart from that, a quiet day. I am trying to get a few things planned for our trip next week. I want to book a walking tour on the afternoon we arrive, but it’s hard to decide which one to take. I might end up spending a bit more for the company that does ‘design your own’ tours - you tell the, your interests and they plan around that. Dinner tonight is beef carnitas. The meat is nearly done, so I’ll just have to put together the sides a bit later. Not sure when DH will get home, so waiting for him to message me. leannec - I hope there’s nothing serious wrong with your foot.

sueg, I like the idea of designing your own tour. That could be very interesting. Might be worth spending a bit more. Of course, I'm always happy to spend your money for you.

Okay, now we’re going to try again to do risotto tonight. I’ll add mushrooms and chicken to the basic recipe. Responding to yesterday’s thread: Tearisci, if only I had an instant pot to cook my risotto in! jeremysgirl AussieMeg and scrappinwithoutpeas, the produce arrived in a styrofoam cooler with ice packs. And the raccoons minded their own business.

lucyg , you had me at mushrooms. Yummy!
I do have an IP risotto recipe, but regular risotto is superior.

Well thanks to lucyg - now I'm craving risotto - but unfortunately taco tuesday is a day late here. Maybe I'll make some risotto tomorrow!

I can’t believe I’m posting on the dinner thread so early! Usually I’m a good 7+ hours behind. It’s nearly 2am here, and for some reason I can’t sleep. I’ve been reading and playing games on my phone. I’m going to regret this when I have to get up for work! DSO and I “did a lucyg” on Sunday, ie. we bought a roast chicken at Costco. It was for DS to use in his lunches, but he has been having other stuff for lunch. So I ended up making (surprise surprise) Buffalo Chicken Mac & Cheese for the 327th time this year, just to use up the chicken.

Yikes, leannec . Did you injure yourself? I hope that your foot is OK and that you can enjoy the day. No injury ... I have had the strangest symptoms since living in a house during extensive renovations ... I was SICK! This is just another one ... it just refuses to go away ... very frustrating!

Happy Wednesday!
We're supposed to get some big storms this afternoon with baseball sized hail and possible tornados so i'm hunkering down and not venturing out.
Dinner tonight will be steak and either mac and cheese or baked potato. I'll see what mood I'm in once dinnertime rolls around.
Hope you all have a great day!

I’ll bet we get the least next to Vancouver. We don’t get snow so I will take the lack of sunshine. Why do we need to know how to drive in snow when the police tell us to stay home if it does snow. Win win. Today is very sunny btw. It could be a bit warmer though. I have a coffee party with my housing complex and they all want updates about me and how I am doing. I already have 2 texts from the organizer next door to come. Dinner tonight could be anything. I would like to cook though.

Glad you're feeling better scrapmavenHope you got some sleep AussieMegI haven't made risotto in years but now you all have me wanting to, lol. No instant pot here either dinner tonight is a lemon garlic pork loin (Aldi), mashed sweet potatoes, and fried green beans/wax beans. I'm hopeful that will make the wax beans palatable. Many years ago when we were broke, someone kindly gave us a bushel of wax beans - I had never had them before but I looked up how to freeze them and we had wax beans twice a week (at least) for a very long time. And have never gone near them again. But I got a big (nearly 3lb) bag in my farm box this week so...we'll give them another try.

It's Wednesday so it is my day off! I got up and took a long walk before it got hot. It was so refreshing. Ran a few errands in town. Now I am home jut picking up and doing laundry. jeremysgirl to answer your question from a few days ago, I do not drink bourbon but DH and the couple that went with us do. We went to Woodford Reserve and Buffalo Trace. The tours were very interesting. Woodford Reserve is beautiful. It is set among horse farms and just has a fabulous setting. It was a fun short, weekend getaway. Going to a baseball game tonight for DGS. I am prepping honey bbq chicken to put on the grill after we get home.

Colonoscopy is over and we are home from the hospital. Results were good and I got the all clear. The procedure was the easiest of the whole thing. Even the drink stuff wasn’t bad - tasted like orange pop - but I was soooo hungry it was awful. We stopped at McDonalds on the way home from the hospital!
Not sure about supper yet but it will be something good!

Happy Wednesday! We finally got power back about 6 pm last night - so 5 full days without. The whole house generator was ordered this morning and should be installed in 3-4 weeks. When DH finally got on board he doesn't mess around!
Today I'm cleaning out the fridge, getting unpacked and doing laundry. Headed out to HEB soon to replenish food. Hoping to find my nail salon has reopened so I can get a mani/pedi. Had an appointment last Friday but that obviously didn't happen! Now with all the yard clean up I need one even more.
DH's port insertion went well on Monday. Tomorrow afternoon they are doing the biopsy, then Friday morning he has his first Kytruda treatment. So things are moving along on that front.
Absolutely no idea what dinner will be. Still need to go find some coffee and lunch!

I just wanted to give a shoutout to all the electric companies who sent crews and trucks to help us out. We'd still be sitting in the dark if it weren't for them. In my area we had crews from Appalachian Utility (KY), Pike Electric (NC), Valley Storm Services Corp (TN) and a huge fleet from Saginaw, MI (have forgotten the company name). They traveled so far and then had to work in 100+ heat indexes. Everyone here truly appreciates their work and sacrifice! THANK YOU!!! There are many more companies from other states here (about 5,000 workers total!) but those are the ones in my area.

Happy Wednesday!!! I just got word that my dil will be getting a c-section on June 3rd. The baby is breech, she has tried everything for the past several weeks to get him to turn. He just doesn't want to, he's folded in there like a little taco. I'll be Grandma Lolly in less than 2 weeks!! Squeeeeeee!!! That brings me to a question....Does anyone have any suggestions on healthy meals that easily transport. I told them that I would bring them dinner for the first several days until they get settled in. I thought about doing a roast with potatoes and carrots in the crockpot, but am drawing a blank on what else I could do.

Emma was breech ... we even tried an "external version" to try to turn her ... not fun! . Didn't work and we scheduled the c-section ... then the little bugger decided to break my water a day early! Went to the hospital in an ambulance because there was no way I was going into labour! The nice thing about c-section babies is that they have perfectly round heads! So exciting for you!!!

It was a quiet and long day but I'm not complaining. I had a contractor stop by and look at the floor that I need to get fixed but he can't get to it until next week. We'll see if that happens because he told me the same thing last week over the phone.
For dinner we had kielbasa with potatoes and onions. I can't remember which pea told me about this and had to try it. It was delicious !

leannec I have had 2 c-sections. One was an emergency and Kait was a planned. They do come out so pretty. My first son was a natural birth and I could hardly push him out. That poor boys head was so mishappen. Yikes!!! At first my dil was all about doing it natural and having a beautiful birth. (It's hard work and very painful, that's why they call it labor! ) She was a little disappointed when they mentioned c-section a few weeks ago. But she okay with it now and is ready to meet her beautiful boy. Thanks for the food recommendations! I think I will make a few dinners, a breakfast casserole, get some sandwich fixings, some fruit, make rice krispie treats (my son LOVES those) and maybe have them pick a restaurant for take home. That should get them started. teddyw I think I will grill chicken and they can make ceaser salad wraps! That was a great idea! Thanks!! Also a sheet pan dinner is a great idea because my son can pop it in the oven when they are ready.

I'm back! I woke up at 7:30am and thought five hours sleep just isn't enough. Luckily I managed to go back to sleep and woke up again at 8:30am. The Birdhouse Lady not long to wait now - how exciting! If I were cooking meals for someone, I would make things like pasta bake, tuna mornay, risotto, curries..... things that are okay to reheat. Some people are fussy about reheating meal with meat in them. My DSO refused to eat reheated meat. I have no such qualms!
