I don’t hear the word marzipan anymore. I don’t care for it but would love a sugary, sweet almond paste without almond extract to get marzipan. I hope they aren’t the same thing.

Almond paste is less sweet, more coarse, and has more almond content than marzipan. It's used to make pastry and cake fillings and things like that. Marzipan is an almond-based candy. Similar but different from almond paste.

In Norway (and probably all of the Nordic countries) almonds are used very regularly in cakes and cookies. I make it myself by mixing ground up almonds, powdered sugar and egg whites. It is extremely common and popular here. And it's very different from marzipan, although that is very popular here aswell. Like busy said, it is much coarser than marzipan.You probably wouldn't guess the two were related if you saw them side by side. Pastries with almonds are my favorite!

There are wildly different qualities of marzipan, but they generally are made from powdered sugar, blanched almonds ground finely and almond extract. The poor stuff has a lot less almond and more flavouring, because nuts are expensive and sugar is cheap.

I LOVE marzipan and there are really, really bad ones out there. The really good ones are not overly sweet and I have had ones that are coarse and they generally are better. The best marzipan I ever had was in Vienna. Lindt sells chocolate covered marzipan that is very good and not overly sweet. Also, World Market carries really good ones as well. Those are the only places I will buy it.

I never knew you could make almond paste! It’s expensive and I use it to make the Italian pignoli cookies. Thanks for sharing that.

I have friends what would bring marzipan candy from Germany. It is so good! I have been hearing about it more and more recently. But, I don't need to eat candy so I haven't tried any! LOL
I haven't ever heard of almond paste.
