Not sure where I found this recipe - but it's yummy! 12 ounces semi-sweet chocolate 1 cup whipping cream 1/4 cup hot coffee 1/4 cup hot water 3 egg yolks beaten 1 teaspoon vanilla 5 egg whites 1/3 cup sugar
Serves 12 Melt Chocolate in double boiler. Whip cream, set aside. Pour coffee and hot water slowly into a bowl with egg yoks add vanilla whisk briskly. Whisk in melted chocolate. Whip the egg whites and the sugar until peaking. Fold egg whites into cholate then fold in whipped cream Make sure chocolate mixture is completely cool!

This is my favorite. Chocolate Mousse - Jamie Oliver
Chocolate, Dessert
Ingredients:
Cheeky Chocolate Mousse 225 g good quality dark chocolate, bashed up 8 Oz 70 g butter, cut into pieces 5 tbs 350 ml double cream 1.5 cups 2 large eggs, preferably organic 1 Tbsp. amaretto 2 Tbsp. good honey
1. In a bowl over some gently simmering water, slowly, melt the chocolate and butter together then remove from the heat. 2. In a separate bowl, semi-whip the cream, until soft peaks; not too stiff. 3. In a third bowl, whisk the eggs and honey until light and fluffy, then fold in the amaretto, melted chocolate mixture and cream -- gently, so you don't lose too much air. 4. Pour into some small wineglasses or serving dishes and leave to chill for at least an hour before serving.
