Hi friends! Long time no chat!
DH and I got back last night from a few days visiting family. Queen Bess was boarded for the first time ever (we usually get a sitter, but since she's on Prednisone, we wanted her to be where someone was always there). They said her appetite was good (we were worried about this because she gets understandably anxious in new places), she ignored the other cats when exploring (they let her out of her little condo a few times to play/mill around), and was a good girl (duh).
We had fish, rice, and peas earlier today for dinner, and then DH just put together some cheese and crackers for us.
Back to work tomorrow.

Yay for coleslaw ! When I make coleslaw I eat it for a couple of days because hubby does not like coleslaw. Other then that I'll stop and get a serving of it from KFC. jeremysgirl I'm keeping my fingers crossed that you will get the job. After all the taco talk yesterday I had to make tacos tonight. Chicken tacos with guacamole and pico de gallo.

I'm late today. But the plan keeps changing. Today I stayed home in the am bc Nick wanted to swing by here for lunch (those rechauffetacos were a big draw! also he is on the road a lot on Tues and it's hard for him to hear anything up for lunch). So I had to wait til about noon to get on with my day. I ended up going to a coffee shop to write a letter to my sister. She is on the spectrum and there is some conflict so it took me a while to get a draft together. I needs editing but I have to step away for a bit. I feel like I have an emotional hangover. Home to a beautiful afternoon...Nick is cleaning gutters and painting them copper! One of the shows on HGTV does it and we decided to try it. It looks nice! We originally were going to grill chicken for big salads, but I am missing my fave poppyseed dressing (never heard of using that for Cole slaw jeremysgirl, hmmm) so we decided to do Burgers. Then I offered charcuterie or grilled cheese and fries as additional alternatives and he chose grilled cheese. We have Deli salads too...Mac salad (yum...never used to like that mayonnaise-y stuff but now I like it), Cole slaw (I usually make Sriracha slaw but lobe vinegarish ones like KFC or ljs), and a bit of pasta salad. And some really good crunchy grapes. Our gc are made with American cheese on sourdough with lots of butter. But I haven't really met a gc I didn't like. Nick showed me one I've seen online made with pepperoni and mozzarella/provolone and marinara for dipping. That sounds good. Brie and apple, Ham and cheese, patty melts, reubens, panini, clubs...we like grilled sandwiches with melty cheese!

jeremysgirl , like lucyg said, I hope that you were reading the panellist's facial expression and body language wrong. I think your answer was really good. It's certainly better than saying "Well, my co-worker is a lazy cow and my manager is useless!" DD came over for dinner. I finally got around to making Marion's Asian Marry Me Chicken again. I made it for the first time just after I had COVID, and I couldn't really taste the flavours. This time I was able to taste it better, although I do think that I might put in some extra gochujang next time. Everyone enjoyed it, even DS who wolfed it down.

Know that I keep the dinner thread people in my prayers. we're having pork tenderloin in the air fryer and roasted vegetables - delicate squash, sweet potatoes, and green beans.

Had a long post written, hit the wrong button and it vanished. No one is super hungry so I threw some russet potatoes and a sweet potato in the oven to bake as they were getting a bit soft. What we don't eat tonight will be good for lunch later this week. Ok, folks, cole slaw, yay or nay? Only if it is German cole slaw which has no mayo in it. Much lighter for hot weather IMO.

Also (again from yesterday’s thread): a big fat YES on tamales. oh my goodness, YES. If you don’t love them, you probably just haven’t had decent ones. The best tamales I’ve ever had were being sold out of some random guy’s car trunk (his mom made them) outside my office 20+ years ago. He never came back, but I’ve never forgotten them, either.

I’ve jumped in here a few times but I m hoping that I can make it stick this time. I love reading everyone’s posts and hearing about your days. jeremysgirl you seem to be very empathetic. I wonder if your empath side picked up on signals from the interviewer and were overly sensitive to them. I have done that many times when I was nervous and trying to read the room. And if the job doesn’t work out consider it meant to be. After all you’ve been through you deserve a position that is a perfect fit. Don’t settle for less. I’ve had an Amish crew replacing my roof all day and I am now relishing the quiet. A glass of wine, some chicken primavera and a good book are calling my name. Thanks everyone for allowing me to participate!

I forgot to answer the QOTD - I like coleslaw and often make it (cabbage makes a regular appearance in our farm box)
Tacos - I usually do fish or gr beef/refried beans but I'm generally game for anything except a hard shell.
Tamales -I'm a not really - I can and have eaten them but wouldn't go out of my way for them - and I've tried them several times from out of trunks (in AZ) and made by older Hispanic ladies at potlucks (in FL) - I think it's the flour used that I don't care for

I swear the best ones are made by someone's mom or abuela and sold out of their home/car/garage. They are getting harder to find in restaurants here in Houston. Very few places have them on the menu. Instead it's lots of tacos and other dishes. I grew up eating tamales as a snack. My mom was 6th generation Texan and she married a boy from the Miss. Delta (where I was born). So I love both types of tamales. When I visit Miss, I typically eat at a catfish house and try to find some Delta tamales (they call them Hot Tamales there). I love creamy coleslaw from an authentic deli. Yummy! I also love macaroni salad, but don't care for potato salad.
