Neither my brother nor I got any invitations for dinner tonight so we'll be eating alone at home. I took New York strip steaks out of the freezer to grill and made coleslaw and deviled eggs. I'm not sure what starch we'll have with it but I'm leaning towards hash browns. I also made chocolate waffle cookies this afternoon with a thick chocolate ganache frosting on them. It is just the boys and I. I took out chicken breasts, but have a headache and don't feel like cooking. I'm thinking maybe grilled ham and cheese or homemade pancakes from the freezer.

I used leftover oven fried chicken, boiled egg, cheddar and strawberries and made fried chicken salads with a honey mustard vinaigrette.
Our adult kids have plans/worked today and our youngest two are at camp/out of state visiting family so DH and I offered to take DGS to watch the fireworks. I'm assuming the adult kids will meet us there. It's been pretty low key around here.

It's been mostly cloudy/rainy here, and I am still mourning not watching "Independence Day." AND it is just me for the next two weeks.
I have left over spaghetti from the other night, so that is what I am eating tonight. I finished the pie this afternoon for a snack. LOL
Kathy, I would love to get the recipe for the cookies!

Chocolate Waffle Cookies1-2/3 cup sugar 2/3 cup cocoa powder 2 cups flour 1 cup butter, melted 4 eggs 1 tsp. vanilla. * Mix sugar, cocoa and flour. Add butter, eggs and vanilla. Mix until well blended. Drop by tablespoon on to hot waffle iron. Close lid and count to 60. (I've made these so many times over the years I can smell when they're done ![:D](//storage.proboards.com/forum/images/smiley/grin.png) ) remove from waffle iron with a fork and cool on sheet of waxed paper. Repeat until batter is gone. (This recipe makes about 30 cookies) Chocolate Icing)1-1/2 cups sugar 6 Tblsp. Milk 6 Tblsp. Butter 3/4 cup chocolate chips 3/4 cups mini marshmallows * Bring sugar, milk and butter to boil. Boil for 1 minute. Remove from heat and stir in chocolate chips and marshmallows until melted. Beat with wooden spoon until spreading consistency. I use a tablespoonful and spread it on the cookies. Let them sit until set. These cookies freeze beautifully and most people like them. They're kind of like a thickly frosted brownie and it's always nice to have some hidden away when something comes up. The cookies sound amazing Kathy.
I fed youngest ds hot dogs with chips. Older ds went to a pool party. I ate take-out sushi that I bought at Safeway; it was pretty good.
Now we're going to get froyo. All you can fill in your cup for $4. Nom nom nom.

I make a similar chocolate waffle cookie, they are so good! We just had veggie burgers with some roasted cherry tomatoes.

Lucy, I bet you could easily adapt the icing to other stuff. I use chocolate ganache on damn near everything. LOL The chocolate pie I just made had a ganache layer on the bottom...

We had a couple of families over last night for hamburgers and hot dogs, potato salad, baked beans, broccoli salad, tossed salad, cucumber salad, stuffed banana peppers, bing cherries, peach cobbler and cream cheese frosted brownies. It was fantastic!
