Good Morning.
Today I'm staying at home and will devote part of my day to dusting after the window mess. I'll also spend quality time finishing my video game. I feel like a 12 year old kid. We're all gamers in my family.
Last night dh wanted tacos. So, tonight he has to have rechauffe chicken sandwiches.
What's on your menu?
What is everyone up to today?

Hello scrapmaven! What color are your nails? Did you have fun? I have some rechauffe soup, a lot of salad, fruit up the wazoo, I did put half that loaf of homemade bread from yesterday in freezer but I still a bunch left. I'll find something, many things to eat today. My day is slow. I had some work to do this morning that I've completed. I had to tell my coworker to enter her project data in the spreadsheet. She didn't know the spreadsheet existed. I had to tell her it existed way before me (so she was here) and I just keep copying it forward and adding a new tab for new year data. She's so dumb. How she did not know, I have no idea. I just put a loaf of gluten, dairy, and egg free zucchini bread in the oven. Jeremy's young cousin was diagnosed with a gluten and dairy allergy a few years ago. She never gets any treats. Her mom saw some of my dairy free baking and asked if I would consider trying my hand around Danielle's dietary requirements. I told her I would. So once this is done, I will freeze it until we see them for the reunion next weekend. I have a meeting at 1 today. It should be quick. And then I'm free.

After needing to clean up the water in the basement, it was a good time to get rid of some stuff. DH and I took a load to the second hand store this morning. We made a small dent in the basement. It’s not a major issue as that side of the basement is only used for storage but I love cleaning out and getting rid of stuff.
Today is the annual library used book sale. You can get a bag of books for $5.00. I’m picking up my mom so we will come home with a few bags, I’m sure.
Not sure about supper yet.

Good evening all,
I popped into after school this afternoon, as we were having an end of school year 'ice cream picnic'. The two main carers bought ice cream, whipped cream, bananas, chocolate and caramel syrups, wafers and sprinkles and we made ice cream sundaes to order for the children (and ourselves). The weather was gorgeous an we sat out on the playground on picnic blankets and enjoyed our treats. The kids from the other after school care groups looked on in envy, as their carers had 'just' bought ordinary ice treats on sticks!
DH is home from Lisbon tonight, but his flight is delayed by half an hour. He'll get home about 8-8:30, so will save dinner for him. The timing on this flight as about the worst for eating - leaving Lisbon at 2:30pm (which is 3:30pm German time) and landing at just after 6:30 (but it will be 7pm with the delay.
I put a beef massamum curry into the slow cooker before I went out, and it smells amazing! I'll cook some rice when I'm ready to eat.

Is this a recipe that you've made previously? It was very kind of you to create this treat for Jeremy's cousin. Your coworker's brain cell switch is still stuck in the OFF position. At least you know never to raise expectations w/her. Keep those expectations low and she'll alaways meet them. Have fun after your meeting.

I am so glad to hear you got a super fun color! I bite my nails something awful. But every once in a while I paint my toenails a fun color. Your zucchini bread will be delicious. Is this a recipe that you've made previously? It was very kind of you to create this treat for Jeremy's cousin. No, I've never made this before. I adapted a regular recipe. I made the same recipe last week dairy free. It came out very well. I thought I'd try subbing GF flour. So far, it looks like the rise isn't the same.

You could easily make it plant based (I think - not sure what's in the curry paste: it may have fish sauce) - just use the vegetables (potato and pumpkin/sweet potato are essential, but you could add others, like zucchini and eggplant) instead of using meat.

Happy Wednesday!
I'm just winding down some tasks before I go on vacation. I told my boss last week in our one-on-one that I was really enjoying social writing more so than my regular job so I got some new clients assigned to me. I'd love it to be half and half with what I currently do and move eventually more to that side of things. Our department regularly shares work so it's a good opportunity to learn new skills. I like that I can be creative with social as it uses a different part of my brain than my normal job.
Dinner tonight will be takeout as I'll be packing and getting ready for my trip tomorrow. I bought some snacks for the flight tomorrow and our road trip but I've been munching on them and need to put them away!

jeremysgirlGF flour won't rise the same because it is also egg free. It needs the egg protein to rise. When I make egg free GF items they have the same taste and consistency as when I make them with eggs without the rise. ETA: I use baking soda and baking powder both and not the same rise.

When I make egg free GF items they have the same taste and consistency as when I make them with eggs without the rise. Thank you, this is good to know. Honestly, I made it into muffins last week and they were delicious. Very moist.

I grew up in an Italian/Irish family, at a time when 'ethnic' weren't really a 'thing', s our family always had more adventurous meals than most Australian families. Add in years of eating out and travel, and my repertoire is all over the place! I keep a good supply of dried herb and spice mixes on hand and we also grow our own fresh herbs in the summer. if you want to branch out a bit, look at YouTube. Spain on A Fork (Spanish, obviously) and Marion's Kitchen (mostly Thai, but other SE Asian cuisines thrown in occasionally are always good. For other cuisines, I search on YouTube or google and hope for the best

jeremysgirl - look for Indian curries. Many Indian groups are vegetarian, so their food may be more adaptable. Thai does use fish sauce a fair bit, but often it is for salt with umami, so there are probably subs out there.

I've been lucky, most of my stuff has come out really well. I've learned a few things to tweak here and there. But I've discovered some really good cookbooks. I've been picking up cookbooks all over the place lately. lol. Because of my laundry list of allergies I have had to research appropriate substitutions. So like if anyone wants a cheaper vanilla sub or runs out while baking, maple syrup is the perfect sub. And honestly I think gives a deeper flavor.

I am working on a puzzle today. I keep a table open with a puzzle so my mom can work on it when she stays with me. Puzzles are her hobby. Turns out that I'm enjoying them as well. I'm finding that I'm enjoying this and coloring on my adult coloring books more then paper crafting.
No idea what we're having for dinner. Might be a eat what you can find kind of day.

Just back from my walk with my bestie...in the nick of time as the rains have started...at least I won't have to water today!!!
Dinner will be grilled country style pork ribs, corn and ...you guessed right a salad.....I really should shake things up with different veggies however I am feeling lazy these days . At least the salads are healthy!!

Happy Wednesday! For a week that was supposed to be nothing but rain, it's almost all missed us so far. We've only gotten a little under an inch. Today it's to the east and south of us. This morning I'm trying to catch up on my paperwork and filing before I go to the hospital. Not sure what dinner will be. Apparently my oven has a delayed start feature so I may set it up for a baked potato and have it ready when I come in. I always have good intentions but am usually too tired to follow through when I get home. He is doing well today. Yesterday they went ahead and did the final PLEX treatment instead of today. Today they are amping up the steroids for 2-3 days to give the lungs an additional boost. The goal is to get him off the ventilator in the next couple of days. DD said he was asking for breakfast this morning which is a good sign. She is on morning duty. They've also cut off the sedation for the day. I'll be going up after lunch.

DH went with me to the sport's club this morning and walked on the treadmill/swam laps and read a book while I did my water aerobics. The instructor today was awesome and high energy. She seems to know everyone by name so I introduced myself. When we were leaving she saw us in the hall and said bye Joy so she retained my name. Dinner will be Teriyaki Chicken over rice with a veggie and a fruit salad. Nice update on your DH **GypsyGirl** ! If critters are eating your tomatoes, place small red ornaments on the *cages* and it will confuse them and they won't return.

I'm the same way about puzzles. I don't find them relaxing at all and they stress me out. My sister usually has one up around the holidays for people to work on and I'll just sit and watch. I'm sure I'm partially ADD because I have a hard time concentrating on them.

I'm going to interrupt summer to show off our volunteer pumpkin patch that had to be harvested a couple weeks ago. I started the day cutting & gutting a couple of the bigger ones to roast before the temperature rose too high. The pulp will be chopped/pureed to freeze for fall soups, muffins, breads & pies. I think I'll get DH to cut and gut a couple more tonight, because it was more of a workout for me than I thought it would be. Then I can stick them in the oven early tomorrow. Yesterday I tagged along with him on a trip to San Clemente - one of my favorite SoCal beach towns - so today I'm just hanging out at home. bklyngal62, we always had a puzzle out at Christmas but during COVID I set up a puzzle area in the living room. DD and I always have one going, but definitely have different favorites styles. Plant World is on the table now. I found Thai chicken meatballs in the fridge that need to be used so will add them to a veggie stir-fry and serve with rice or rice noodles depending on how much energy I have later. Rice is definitely easier.

DH and I (mostly DH) did so many puzzles during Covid that he got burnt out. Maybe someday he'll do the SF Giant's stadium puzzle that DS gave him for Christmas several years ago. We did the LSU stadium one and it was really hard!
