Asking for a young lady who will be traveling by herself. Staying with friends over the weekend. Friends have to work Monday. Don't have to be at the airport until 2:00 in the afternoon.
What would your recommendations be with priority given to safety as a solo female traveler?

Do you know what area she is staying in? Denver and outlying townships cover a huge area, so she would probably want to do something fairly close to where she is staying. Also, do you know of any interests such as being outdoors, musesums, shopping?

No, unfortunately I don't know where she is starting the day, but I do know the end destination is the airport.
She likes shopping (especially thrifting), coffee shops, museums, libraries, exploring big city life.

(feeling a little goofy) I thought this was going to be a story about something that happened to a Pea in Denver.

Without knowing where she is staying it's kind of hard to make suggestions. In general Denver is safe. Union Station, 16th Street Mall? Molly Brown House.

The area around the airport is boring. ha! A lot of open space areas. Then as you get closer to the city life, there are lots of hospitals, neighborhoods, shopping like most cities have such as Walmarts, Costcos, etc. The 16th street Mall is a pretty neat shopping area. No cars allowed, so good walking shoes. The Denver Zoo is nice. It is fairly huge, but flat, so the walking isn't too bad. The Denver Museum of Nature and Science is nice, again huge. These places are about 25 miles from tha airport, so that would be a consideration.
Since I don't live there, I'm not up on thrift stores and coffee shops. Having lived just 60 miles south of Denver all my life, been many times, but we usually hit the museums, botanical gardens, restaurants, specialty stores.
As far as being safe. I find Denver to be typical to large cities. Just keep you money/purse secured as you would any where you travel. Downtown around the capital building are many homeless that for the most don't bother you, but I still avoid the area.

Denver Mint is interesting, tickets can be purchased when you get there and they are relatively affordable.

You know me, I'd head to the Rocky Mountain Arsenal and look for bison, birds of prey, and burrowing owls! I've been to the Denver Mint and the state capitol. Both are decent, but they aren't really that interesting to me. Denver has a few fun museums though. I like their zoo and the Museum of Natural History almost is next door.

The Stanly Market Place is in Aurora. Its not that far from the airport either.
It has a bunch of quirky shops, coffee shops, resturants, health stuff, etc.
