Good morning. Summer is flying by. Today I have a conference call and then I have a Zoom voice lesson. Dinner is going to be enchiladas in the toaster oven. I have to prep the chicken this am. I'm making it w/my new Penzey's chicken taco seasoning. I ordered some of their spices, because I've heard really good things about them. What's on your menu? What are you up to this week? We have to swing by mil's house one day. My dear friend is living there temporarily and the closet in her bedroom fell down at 2am. So, dh is going to install a new closet. I'm looking fwd to spending some time w/my friend. **GypsyGirl**, your news yesterday brightened my whole weekend. Did they move your dh to a private room, yet? May this week bring healing, treatments that work well and happiness to all.

I miss it so much. They have some really good stuff. I'm sorry about the closet falling down. That must have scared her too. Poor thing. I have NO meetings today!!!!!!! Yes, yes, yes. I have a very light week and I'm done on Wednesday. This is the big camping reunion weekend with Jeremy's family in Ohio. I'm looking forward to it, however, it's a bit overwhelming too because I have to plan out and take my own food. I am not finding any of this way of eating difficult, except for eating with others. It's hard to just not to be able to eat what everyone else does. The good news is that apparently Jeremy's cousin's new girlfriend is a vegetarian. So I won't be the only weirdo. Tonight I'm making some BBQ bean burritos with peach salsa. They will be packed with beans, salsa, Mexican rice, and lettuce. Should be delicious. I am going to read in my free time today. I finished one book yesterday. I finished another, but it was only half book/half cookbook. So I'm not sure that counts. But I'm like really thick into The Book Thief right now and I'm enjoying it immensely. Which says a lot about how good the book is because I am not a fiction reader.

jeremysgirl, you'll get used to eating differently than others. Will you want what others are eating? At least you'll have another vegan lady to join you. I'm so glad that you get to go camping. I agree that summer is flying by! I am sick ... I never get colds but I have a doozy now ... my countertop looks like a drugstore. I just had some Neo-Citran ... yummy! My immune system is actually quite strong because I'm a teacher but I was exposed to a lot of people from all over the world this past week ... at least I will be healthy by the time I go on "Staycation" with my dd's on the weekend of the 9th! Dinner tonight will be something that does not need to be cooked because there is no way I feel up to doing that! I will post photos again tomorrow!

Will you want what others are eating? This hasn't been a really big problem. For a while I missed cheese. But cheese has that addictive casein. And now that it's out of my system, it's not a very big deal. Except for pizza. I do want pizza. But it's kind of like missing out on some of the community. Like they hired a hibachi chef to come out to the house and do a show/meal for everyone. Well, they use butter and they have egg in it. So everyone will be having fun with that and I can't. But every once in a while someone will say something and I'll be like, that would be good. Like a couple of weeks ago littlemama said she was making tuna fish sandwiches. And I was like, I could go for some tuna and tomatoes. Weird, huh? You wouldn't think that's something someone would crave, but it struck me that day and sounded delicious. Did you finish your camping quilt? No, it's been in the naughty corner because it frustrated me. Jeremy and I had a talk several weeks ago about the camper. He was toying with the idea of ripping out the subfloor in the bathroom (that he redid) and redoing it. But he said he needed to be damn good and ready before undertaking that big job again. I told him about how the camper quilt was frustrating me and I am pretty sick of the pressure everyone keeps putting on us to finish it. I swear we live in an instant gratification society that is used to seeing a complete home reveal in a fucking hour. So we agreed to just stop. Until we are ready to proceed. As long as we can camp in it, then the rest will just wait. When it gets done, it gets done.

Will be going down there in about an hour and hopefully can find him! He is going to be excited when I tell him my hair stylist is going to come to his room on Wed. and cut his hair for him! He's been asking for that for a couple of days. Once he gets a haircut he'll feel better. Hopefully she'll shave his mustache off as well. They had to shave his beard off due to the all the masks but didn't do the mustache for some reason. He's just going to get rid of it all and then start fresh with a new one.

Hi friends! DH and I are having a lazy day off together because we went to our nephew's 2nd birthday party yesterday. Except for our nephew and 2 of DH's cousin's kids, it was all adults. But goodness that child is exhausting! We're content being the cool aunt and uncle (at least we think we're cool... he's 2 and lives 1,400 miles away and has no opinion on the fact... 😂).
I think DH is also going to start applying for jobs again! The whole January situation really put a damper on him, and rightfully so. But some recent things at his current work has him looking again.
Dinner this week is chili and cornbread.

We went to the kids’ new house for dinner last night. They did a wonderful job. I was so impressed how well they are adulting. It’s wonderful! Their dog was so happy to see us. Their have a lovely new house and they live so very close. (It took 3 min to get home). Yay!!!

Last night I was cutting up one of our orange tomatoes that are so sweet and I told dh that I would give anything to be able to eat tuna and tomatoes. That's not weird at all. I crave salads instead of chocolate. It's strange sometimes what we crave. I did have some good vegan "fish" tacos at our local Mexican restaurant. Seriously that "fish" was so good I wish I knew where they got it. ITA about the camper quilt. If it's frustrating or not fun then put it away and go have fun. I mean, right? It's like it was messing with mine and Jeremy's sanity. For different, but similar reasons. And we never wanted this to be anything but fun. my hair stylist is going to come to his room on Wed. and cut his hair for him! He's been asking for that for a couple of days. Good evening all, Today was day one of my self imposed isolation. DH mostly took today off - he was meant to fly to Budapest this morning, but decided against it when he was sick yesterday and so he didn’t have anything planned to do at work anyway. I did go out to the grocery store early, so hardly anyone was there, but that was all. Still watching Olympics and knitting. I am also starting to plan some projects both for the hospital and for the first weeks I’m home. Tomorrow I need to check all my medications and work out what I need a new script for before the surgery - I want to be sure I have enough for my first week or two home as well.
Dinner tonight is roast vegetables and grilled cheese.

I was happy to find faux or no-tuna salad recipes when we were strictly plant based. I now make a half & half mash-up using chickpeas and tuna. This is the Forks Over Knives recipe and I think the only thing I do differently is add a ton of fresh dill. If you don't have tahini, sub in olive oil and/or pickle juice to get the consistency you want. He is going to be excited when I tell him my hair stylist is going to come to his room on Wed. and cut his hair for him! What an awesome idea! It is meatless Monday for us, so I'm making the veggie & tofu stir fry with soba noddles that I've been thinking about for a couple weeks. Probably with a ginger peanut sauce. Laundry is chugging away and when I get the third & last load started I'm heading out for a walk and stop at the library to pick up a couple more holds. Why is it always feast of fame with holds? Happy Monday dinner friends! Back from vacation and back to work, I cleaned out e-mail and organized what needed to be addressed on the trip home on Saturday, I worked a couple of hours yesterday so that today wouldn't be quite as bad, So, I'm in decent shape for my first morning back. We had a great time on Vacation, I love having the family all together, but also always glad to be back home too. jeremysgirl- I have a standing team call every morning at 9 am, I'm always so happy when that's the only call on my calendar! You're also so right on the instant gratification factor. I hate the unrealistic expectations society now has. **GypsyGirl**- So glad to hear your DH has turned the corner, continued good thoughts for his healing and your support. leannec- Feel better! relax and allow yourself time to recouperate. scrapmaven- enjoy visiting with your friend. How scary to have the shelves collapse in the middle of the night. I've been on a reading binge lately too, reading friends! DH and the pup left for the ranch this morning, so, again, dinner is what I feel like when the time comes, I want to make a plan for later in the week when he is back. I also need to get some groceries in the house. I want to eat healthier now that I'm home until September, other than a couple of ranch weekend trips. Have a great Monday my dinner friends!!

Did a major grocery shop and now chilling in the air conditioning.
Supper will be rechauffe grilled chicken, grilled potatoes and corn on the cob.

In fact I’m on my way to the airport bookless. All the ones dd2 had were hardback and I don’t want t to lug that around. Dinner will be whatever I find at the airport. The meatless tuna sounds good to me. I like tuna but don’t love it. jeremysgirl I didn’t know casein was addicting. I’ve never been a cheese fanatic. Pizza is a must though. Your dh will feel like a million bucks after a haircut.

The weather here is overcast and drizzly off and on, temps only in the 60's..So I decided to roast the rack of pork I have had in the freezer, Along with roasted fingerlings and carrots and of course there will be applesauce😊 The pork will give me at least 4 meals, so I'll divide it up and freeze in in portions...Makes for an easy dinner on those nights I don't know what to have. GypsyGirl, I am SO very happy to hear your DH is on the upward trend!!! Continued prayers.

When I finally learned about ours, it makes it so nice! When books get to the point that I'm next, I freeze the hold until I'm ready for the book! I usually *thaw* two at a time so I always have a book ready.

That damn PB&J thread. I read it at 9:00 last night when I hadn’t eaten dinner because I’d had a late lunch, and suddenly I was starving and HAD to have PB&J. Dinner tonight might be beef barbacoa I picked up a while back. I want mashed potatoes with it and need to see if there are any usable potatoes remaining. There are also green beans from the gentleman friend’s garden, and I know from past experience, they are soooo good. **GypsyGirl**, I’m happy to hear about the progress your DH is making. Wonderful news. I’m still very glad to see our wandering members returning to the tribe.

When I finally learned about ours, it makes it so nice! When books get to the point that I'm next, I freeze the hold until I'm ready for the book! I usually *thaw* two at a time so I always have a book ready. Definitely looking into this. In the meantime I bought The FiveStar Weekend. My flight is overnight and I’ll be the 1 out of 300 not sleeping.

I’m beat today. I went to my nieces son’s baptism yesterday. It was a 2 hour drive each way. My DD and her 10 week old daughter went along. The baby was so chill the whole time. But it was hot and busy and now Grandma is exhausted!
I’m making salad, fruit and grilled chicken for dinner for my Monday night get together with DD. Her husband golfs on Mondays so I make enough for her to take supper home to him for later.

Or sometimes autofill/correct "help" you while typing and you don't see the error until after posting and someone has quoted you so why bother to correct? teddyw we had a connection through Philadelphia a few years ago and I discovered a free book library in the terminal. It was the perfect place to pick up a paperback before the flight - I've never seen one in my usual airports.

I am glad that summer is flying by for y'all, because it means that it will be here before I know it! Although it feels like winter is d--r--a--g--g--g--i--n--g. I had to go into the office and do the later shift at work (9:30am-5:30pm) to match the new girl's hours, so I didn't get home until after 7pm. Which means I missed dinner at MIL's. And what did she cook? Only one of my favourites.... lamb cutlets! It was part of a Middle Eastern feast. DSO 'kindly' took photos of all the beautiful food as I was sitting on the train, and the last photo was of empty plates with the question "Do you want leftovers?" Grrrr. But of course, I needn't have worried... MIL sent him home with a big plate of food for me. jeremysgirl you would LOVE the grain salad on the left and the veggies on the right - delicious!
