My best friend and I are renting a VRBO for 4 days in Oct to get away and scrapbook and spend time together. It's a small cabin out in the woods. Not much near by but a few resorts and bars. We usually stay in a bigger city and go out to eat every night, or order in pizza, but won't have that option here. I think one night we will drive over to the local bar and get a burger, but the other days I am trying to think of what we can do. We do NOT want to cook. so super easy things. Probably lunches we will just do bagel sandwiches. We usually just stay in our PJs/sweats all day and scrap and watch dumb movies. Can. not. Wait!!! ha.

Pick up a frozen pizza for a quick easy meal. How about meat, cheese, crackers, grapes, some deli turkey or ham for a quick sandwich.

We just had a family vacation in an air b and b type place, one day we did "charcuterie board" for lunch so cheese, crackers, grapes, nuts, and some type of meat product.
Another idea is yogurt, granola, and sliced fruit (like peaches.)
On the day we travel there we usually pick up a take and bake pizza on the way in so we don't have to think about dinner and there are usually leftovers for lunch the next day.

If you have a Kroger, look into their Home Chef meals. They are pretty good for heat n eat, and you won’t have to deal with leftovers. Just pair one with a salad kit and you are good to go.
If you don’t have Kroger, I’m sure most grocery stores offer something similar these days.

That sounds so fun! I would bring a frozen lasagne and bag salad, deli fried chicken (or rotisserie) and potato salad, frozen PF Chang meal and frozen egg rolls. These should leave leftovers for lunch.

That sounds like such a fun weekend.
How about pre-cooking (in slow cooker, maybe in a liner) something like chili or spaghetti or teriyaki chicken, freezing it, and popping it back in the slow cooker to cart along on your trip. Just needs to defrost, heat, and serve. If you use a crockpot liner, there wouldn’t be any cleanup to speak of, either.
Burritos or deli sandwiches you can buy at home, wrap in foil, and refrigerate for a couple of days to eat when you feel like it.
Ingredients for nachos or quesadillas that you can prep at home, then just slap on a paper plate and nuke (or a baking sheet/oven if you’re a purist).

Is there a grocery store on the way? You could get a couple trays of veges and fruit. Alot of delis have chicken salad - you could get crackers or bread for sandwiches.

oh, I like the nacho idea!! that would be super easy! I could also pick up chinese take out and bring with and re-heat! that would be super easy. I just don't want to lug a bunch of stuff with also, plus scrapbooking supplies, which I also bring too much of.ha

When we do our Soul Weekend (crops) we do a slow cooker dump soup, sandwiches, salads, veggie and fruit trays. We have also prepped meals in advance to just pop into the oven or slow cooker.

I would probably make some sort of frozen meal ahead of time to take along - probably lasagna. I know you like a bagged salad. Bagged salads have come a long ways since that epic post and for the record I was on your side back then.

I generally make one-pot meal casseroles of some type and freeze them for kind of occasion. That's what I took to a friend's beach house for a recent girls' week. There's also so many easy instant pot meals where you literally just dump ingredients in and walk away. I recommend an "egg roll in a bowl" recipe for an easy and delicious option.

With just the two of you, I'm not interested in a crockpot meal, but always think of them as feed a crowd food.
I like the idea of loaded/load your own nachos, tacos, quesadillas and/or sandwiches. Or build your own flat bread pizzas. Or work your way through a bunch of frozen appetizers (that I consider enough to be a meal, but the guys in my life don't).
Since it is Oct, I'd would definitely bring a couple of soups to heat up.
Sounds like a great getaway!

We rented a ski place with the kids and grandkids at Christmas time so there was a huge crew of us. We had a whole ham that lasted for several dinners, breakfast burritos, and sandwiches.

It’s supposed to be pretty mild this weekend. You could get away with using the oven. I served Stouffer’s chicken Alfredo one holiday that was a HUGE hit. I also liked their enchiladas before I became DF.
I love Ina Garten’s Curry Chicken Salad and we have it at least once a week these days. And my tomatoes are producing like crazy, so BLTs are another favorite.

Cold cuts, brioche rolls, fancy mustard, mustard, different kinds of cheese, lettuce, tomatoes, pickles.
Each of you pick your favorite meal, prepare them before you leave, and just mic it up!
Don't forget favorite snacks like popcorn, chips, etc.

If it were me, I'd bring frozen pizza, frozen taquitos, and chicken salad with everything bagels and (cold) tuna noodle salad that I made at home ahead of time. Those things + BLTs and grilled cheese sandwiches with soup would last the whole weekend, I think.

Since it’s just for two people I wouldn’t want to do the kinds of things I’d suggest if it was a bigger group. I’d be all about the “girl dinner” for those days. Things like: cold cereal and milk; microwave baked potatoes that I’d load up with butter, shredded cheese and sour cream, etc.; pancakes or waffles that I made ahead and froze then just reheat and serve with syrup; scrambled eggs with toast; sandwiches; canned Progresso soup or ravioli; taco meat made at home and frozen then reheat in the microwave and make nachos; cheese quesadillas; bagged Caesar salad with or without chopped up chicken strips on top; charcuterie stuff like cheese, crackers, fruit, raw veggies assorted dips. I’m the queen of the lazy girl dinner when my DH isn’t home to insist on actual food!

When my BFF and I went to her cabin, I made scrambled eggs with feta and spinach for breakfast. Super easy.
Dinner was cheese, crackers, olives, and some flavored almonds, plus wine, of course!

We did the vrbo thing in Florida last week and one night we got fried chicken from the deli at Publix and threw potatoes in the oven for baked potatoes and added a bagged salad with cherry tomatoes. It was one of our favorite meals at the house.

Prep at home. Make a soup, lasagna, whatever you both like. Chop veggies. Crock pot or casserole things so you don't have to spend much time cooking
We went to a cabin recently and I did things like mix dry ingredients for pancakes and put a label on it for what was needed for the wet ingredients. Made pasta salad. Had some other things prepped, cut and in seperate containers.
