casserole? I personally hate bourbon, but it would probably be ok in a casserole. But I have young kids coming so I'd rather just leave it out. Is there something else I can substitute to make up for the liquid or is should I just omit it all?

Your dish probably needs the liquid to have the right consistency. I'd just do some water or possibly milk.

I'd just omit it, if you don't want to include it. But, it would be perfectly fine to serve to kids. It is only 1/4 cup for the whole casserole, AND the alcohol evaporates during the cooking process, leaving behind the flavoring. No one could get drunk on it.

How about using sherry instead, and cut it in half with water. This would give a good flavor, and reduce the alcohol content so it should be OK for kids.

I would say chicken stock unless there is beef in the casserole and then you could use beef broth as well.
Alcohol cooks out so the kids aren't getting drunk off potatoes, or if they do, at least you won't have any leftover

Who hates bourbon? You can use whiskey, brandy, basically any liquor.
ETA: Please don't use chicken or beef broth, that's just gross.

What recipe is this? I made The Neelys Bourbon spicy sweet potatoes once with bourbon and once with a concoction of vanilla and rum extract. My advice, use the bourbon. It was one "shooter" bottle. The liquor burns off but the flavor really added to it.
