I bought some eggplant today at a farmer's market, and I don't know what to do with it. I've never cooked eggplant; I like it, but I've only had it in restaurants as eggplant parmesan. I'm sharing a photo because these are little bitty eggplants. I would love to find a way too cook them that aren't eggplant parmesan. Any ideas?

Quarter them up and throw them in a stir fry or curry. They absorb flavor very well. Lots of Thai dishes have eggplant in them.

Besides eggplant parmesan (sorry!), we also make baba ghanoush sometimes.
(It can also be used in some faux meat recipes, such as "meat"balls.)

Yes! Ratatouille is delicious - especially this time of year when summer vegetables are plentiful. You can stuff them with various things - sautéed ground beef, onion and tomatoes topped with cheese, cooked rice and beans, etc. and then roast them in the oven. Eggplant caponata is delicious on toast.

A co worker brought a Pakistani dish that was very much like lasagna, but the pasta was swapped for long segments of eggplant. It was delicious.

A co worker brought a Pakistani dish that was very much like lasagna, but the pasta was swapped for long segments of eggplant. It was delicious. Lasagna with thin sliced eggplant is what my Italian DIL makes. She also fries it breaded.

Those look like fairytale eggplant jeremysgirl had some great eggplant recipes and tips that she shared with me when I got eggplant in my farm box several times Eggplant isn’t my favourite tbh though

I love to make a big pan of roasted veggies (usually eggplant, mushrooms, onions, asparagus all chopped bite size) seasoned with salt, pepper, garlic, creole seasoning. Roast under broiler until it it gets nice and browned. I serve it over pasta, drizzle with balsamic vinegar and some Parmesan cheese. The eggplant has a creamy texture like melted cheese. I don’t feel it even needs sauce.

A silky oil free hummus. You roast the eggplant first, then make the hummus with other classic ingredients adding the roasted eggplant pulp. Delicious.

This is our favorite way. I modified it from an allrecipes original. Stuffed Eggplant with Shrimp and Basil Prep Time: 20 min | Cook Time: 25 min | Servings: 2 servings Ingredients: 1 eggplant, peeled and chopped 1/4 cup olive oil, divided salt and pepper to taste 1/2 lb shrimp - peeled, deveined and chopped into chunks 1/8 cup chopped fresh basil 2 cloves garlic, chopped 1 small onion, chopped 1/2 cup white wine 1/3-1/2 cup Italian seasoned bread crumbs 1/3 cup grated Parmesan cheese, divided Directions: Preheat oven to 350 degrees F. Heat 2 TBSP olive oil in a large, deep skillet over medium high heat. Sauté onion and garlic. Stir in the chopped eggplant. Season with salt and pepper. Pour in wine, and simmer 5 minutes. Take off the heat. Add the shrimp, basil, bread crumbs, the rest of the oil, and half the Parmesan cheese. Place mixture in shallow casserole dish, and sprinkle top with remaining Parmesan cheese. I grew up eating fried eggplant. After peeling, slicing and soaking for a bit in salt water, it is dipped in a batter and fried in a pan. Yummy. I just made some last week.

Thank you for this thread! I planted an experimental eggplant last year in my garden, made eggplant parm and liked it so much that I planted 3 this year...and they are THRIVING. I was wondering what else I could make as I have about 4937 eggplants now!

I love it lightly fried in a chili garlic sauce - Asian style. Stuffed eggplant is good. Ratatouille. I love good eggplant Parmesan. Lots of middle eastern dishes call for eggplant.

Eggplant gratin or Eggplant Parm are my go tos. Had an eggplant almost ready the other day, but the squirrels ate it. 😢🤬
