Polenta…

I have some leftover polenta that someone gave me (the kind that comes in a tube) - I’d love to use it up tomorrow -
it’s been a long time since I’ve cooked with polenta and I usually make it myself — would love some delicious suggestions of how to use up the tube - I’m thinking of sautéed mushrooms and marinara sauce or something like that?

Its been eons, but we use to fry slices in oil til crispy. Eat a few with a drizzle of syrup or powdered sugar.
But with the rest, we would grease a baking dish and place a layer on the bottom. You could use canned chili, but we would fry hamburger with onion and bell pepper. Add chili spices such as garlic, chili powder, cumin, and sometime diced jalapenos or could use a chili seaononing packt. Since this is all by eye site and no real recipe, it all depends on how much you are making per the number of slices of polenta and the amount of chili, but I add one 15 oz can of tomato sauce. I like my chili thick so it doesen't make the polenta soupy. After chili is done, spread on top of the slice polenta and all another layer of slices. Add shredded cheese to the top and bake until cheese starts to brown and chili is bubbling. Let stand about 15 minutes before serving.

We tend to put slices in a pan to crisp them up a bit, but we do have a recipe for creamy polenta that uses a mushroom ragu on top, and we love it, so adding sauteed mushrooms to slices of the tube style does sound very good to me.
