Hi! I'm taking a 9x13" pan of vegetarian strata to a potluck brunch on Sunday. I've been looking at recipes online and they vary sooo much.
Eggs - I've seen between 4-16 for a pan this size!!!
Bread - all seem to use about 8 cups of cubed bread. - some people toast it, others don't - i'm planning to use sourdough and keep the crusts - do you do that? Other bread?
I plan to combine and refrigerate overnight. Do you do that? Baking instructions seem to be - leave at room temp for 30 minutes and then bake at 375 for 40-50 minutes, until center is barely firm. Sound right?
Some cooks stir all ingredients together and then dump into the casserole pan, with a bit of extra cheese sprinkled on top. Others layer all ingredients two or three times.
Fillings: I'm planning mushrooms, broccoli and green onion, with nutmeg and a bit of dry mustard added to egg mixture.

I'm no help but that sounds delicious. Although if it is strata, I would do layers, not cube and toss. And I think the more eggs the better. I use 8 in my pan of bread pudding or baked French toast.

I've never heard of "strata". Fascinating, the things you learn here, even after all these years! I only know it because of the movie "The Family Stone" where SJP gets it dumped all over the front of her shirt. >.< After this post though, I'm wondering if I should attempt one for Christmas..

As you have said there are a ton of ways. I have always for the bread: not toasted, cut off the crust, and just laid them flat in the pan. I think it took like 6 slices to cover the bottom. I refrigerate overnight as that seemed to be the premise of the dish, to sit/soak and to be able to prepare ahead.
The egg amount seemed to be around 6 or 8 for a 13 x 9 but truthfully I just tend to search for a recipe when I am making it and use their egg mixture ratio, so I am sure I have used various amounts and haven’t really been able to tell much of a difference with that.

Also I like your veggie mixture but I might cook the mushrooms some so they are not as watery.
I take out of fridge and bake . Not sure of temp but I am guessing 350 for about 35 to 45 minutes. I tend to use whatever the recipe I am using for the egg mixture for the baking temp and time.
I lay the bread. Sprinkle the ingredients separately (other than probably mushrooms and onions, which I would sauté together) and then the cheese. The egg mixture is then poured over.
ETA - I also use dry mustard in mine.

Technically a "strata" is a layered dish, but my favorite version does mix the eggs, veggies and bread together to sit overnight. Layering is an aesthetic choice. I would call this a breakfast casserole over a strata, but whatever you call it, it is delicious. Spinach, Tomato and Feta StrataMy only changes are to add a good amount of fresh, chopped dill (1/4 cup?) and 1/2tsp nutmeg. It uses 8 large eggs and has the same cook time/temp as what you plan to do. IME, using a dense bread like sourdough, challah or brioche is always best. Leave the crust on.

When I have made it I have not toasted the bread, I agree with the poster who said to layer it (with cheese inside, let the strata sit overnight in the fridge and I have made a white sauce with mushrooms (because it isn’t rich enough lol) in a pitcher on the table for people to pour over it. I don’t have the recipe and have not made it in years, but the sauce contained Worcestershire sauce and was really good. Not sure if that is too many mushrooms, or if that would fly at a buffet.
ETA: all of the recipes sound delightful!
