Suggestions for easy, light, seasonal appetizer? Something with just a few ingredients and no bread, cracker etc?
Something like sliced heirloom tomatoes with mozzarella drizzled with balsamic (which we do a lot).
Looking for new ideas for tonight….thanks peas!! Also ideally it would be vegetarian….

DD makes a very light, fresh tasting "hummus" using frozen peas, lemon juice and a bit of olive oil. Prob a little salt and pepper. I love dipping other veg into it.

Go to the olive bar section of your supermarket and get the sweet, round red peppers that are hollow in the middle. Stuff a mozzarella ball (also from the olive bar area) inside each red pepper. Serve on a tray with greens. They are sooo good.

Roasted squares of Butternut Squash drizzled with a mix of Browned Butter, Maple Syrup, Cinnamon, Smoked Paprika, S&P and tossed with chopped Pistachio's. Served with Toothpicks or bitty forks. Kids love it cut into little shapes with cookie cutters!

I like to do a selection of different olives, mini stuffed peppers (as mentioned before) and other marinated vegetables - eggplant, zucchini, sundried tomatoes etc

Prosciutto, fig, and Brie
Wrap prosciutto around a small slice of Brie. Put a little dollop of fog jam on the Brie. Delicious warm or cold.
It’s delicious on a small crunchy bread or cracker, but also not on the cracker. I think it could also be great on an apple slice.
