I bought the Love is a Pink Cake book by Claire Ptak from Violet Cakes in London.
She does list the Gas Mark/C & F temps - but she has 150C Fan - would that be convection in your neck of the woods?
My oven has regular bake and convection bake, so I'm not sure if I should set at 400F on convection bake, or 375F on convection bake (here the rule is to reduce temp by 25 if using convection)
Help!

My oven in Belgium was Italian. The fan setting was convection. But my conversion app says 150 degrees Celsius is 300 degrees Fahrenheit. My best guess is that you want a 300 degrees convection setting.

I did google - but got all lost in Fan C to F conversions with no convection F, so wasn't finding the correct answer lol. But my pumpkin pie is now baking away at 300F convection (325F in the book) so here we go1

Or at least I thought it did. I had a convection oven once but I never thought it helped with even baking any, do you think it makes a big difference? Asking as an amateur, of course!

Not the OP, but I can bake two pans of cookies at once on convection vs. one at a time without. I do switch racks and rotate the pans halfway through the bake time though because even on convection my oven has hot spots.

Oven temps are the main thing I struggle with in baking from across the pond. I can cope with cups instead of ounces but the temps floor me and I tend to make a best guess.

I do switch racks and rotate the pans halfway through the bake time though because even on convection my oven has hot spots. The best thing I've ever tried was a set of Airbake pans. My cookies are now perfect.

It's hard to say - my commercial oven is electric convection - and it runs a bit cold. I have a thermometer in it to keep an eye and need to set about 25-50 higher to get to where I want it. But my house oven is great for baking! I have to remember to knock it down (it has a button to press to convert) when I use convection or things get over done. I love it for roasting though!

I don't with cakes, but I will rotate pans for macaron and sometimes cookies.
