I always use a flat leaf parsley, myself. But I don't know if that's what the recipe intends unless they actually show it or specify.

What kind of food is it? I grow Italian parsley (flat leaf) for use in Italian dishes. I don't bother with "regular" parsley as anything other than a decorative garnish.

The flavor is similar - flat (Italian) parsley or curly. But I haven't seen bunches of curly parsley in the store in ages. Just flat parsley and cilantro. Ours always seem to bring it out for the holidays as I think a lot of stuffing/dressing recipes call for it. I agree that the flavors are pretty similar. I think most recipes that don't specify or aren't Italian are assuming curly parsley, OP, but use whatever you have/can find.

I can’t think of specific recipes other than the one I’m making today—cabbage soup. At Aldi they only had Italian parsley so I got that but the other store usually has both. I’ve always wondered which one is “right”. A lot of times I just skip it altogether.

certain dishes - like the salad dressing I make or some greek dishes use the curly kind. I put in food processor. It makes a difference. It adds texture and a slight bitterness.
For everything else I use flat. if I can find it

I only ever use flat leaf parsley.
I just checked a 12 random recipes that use parsley - 8 of them specified flat-leaf parsley, 2 of them specified continental parsley (which is flat-leaf parsley) and two of them didn't specify any particular kind of parsley. None of them specified the curly leaf variety.

If s not specified in the recipe, use curly leaf. If it’s specifically asks for flat leaf, use that. Sometimes I don’t have flat leaf as I am out or the flat leaf plants need a beak, then I use curly. I will use curly in everything before I use flat leaf in everything.

I use flat leaf parsley, because that's what's in my garden. I can't remember the last time I used the curly leaf type.

According to Ina Garten (the Barefoot Contessa), both are very similar in flavor. She generally prefers flat leaf parsley because a lot of her dishes are French inspired and flat is more common in France. If I’m buying it, I’ll buy flat. But I grow curly in my herb garden. For two summers now, my flat leaf hasn’t taken off so I use curly because that’s what I have.

My HEB has both all the time but I only buy flat leaf. I do use a lot of parsley and cilantro so always have fresh on hand.
