I like cornbread but it is not on my menu anymore. I like any kind.
lovely day here. the cleaning lady is coming, so of course I have been picking up this morning. I am on a church committee dealing with excess property and am going to a training on affordable housing and the faith community. so I have about 2-3 hours of video to watch before the zoom meeting tomorrow. it is all a daunting process and it is clear why it takes years and years to build such housing.
I talked to my kid in new zealand last night.. after 6 months in corporate job, she is learning about the myth of the work life balance.. like promises made, promises not kept. sort of funny. she is trying to just not stay late and work. not looking to make partner.. so just going home at a reasonable time. she doesn't have enough graduation tickets for the whole family, but is working on it. I'm so looking forward to seeing her in 6 weeks.
I have leftovers for my dinner, I'm not sure about the rest of the family. I did get a significant dent in cleaning the basement so I can get the car in garage when on vacation.
hope everyone can relax as much as possible..

We got up at 5:30 to vote, were in line at 5:50, and home by 6:15 (polls opened at 6). We were numbers 6 and 7 in line. I took a shower when we got home and took a nap before work. DH has the day off, so he's been napping/watching Unsolved Mysteries.
Two more days til my last work day of the week and then VACATION starts Friday!
Edit: I am also getting an ultrasound to rule anything out from my labs last week, but I am hopeful it was just a fluke and nothing is amiss.

Add me to the sueg camp of never have eaten corn bread. Perhaps it’s because I don’t eat chili or soup. I also don’t think cornbread is a Canadian thing. It’s a gorgeous fall day with sun and warm temps. We are sitting on the deck before the temp drops and winter moves in. Plans for today include laundry, a walk and then another walk with Walker. Supper will be take out pizza.

scrapmaven , naby64 - thanks for the recipe, I think I can probably get everything here. But you forgot the important bit - what am I eating this with? or do I just lice it up, spread it with butter and eat? Chili, a pot of pinto beans, taco soup, vegetable soup. In the summer- fried yellow squash, purple hull peas, fried potatoes, fresh sliced tomatoes, sliced onions. Off the top of my head.

I have never used a recipe. Learned from my grandmother and mother. Break the egg and mix it with a spoon. Add a bit of milk, using a coffee cup. "About that size". Then just enough cornmeal to have a runny but thick batter. See how that all makes sense? But the key is to have the fat of your choice(I use avocado oil) screaming hot in your screaming hot pan. You want it to sizzle when you pour it in. Then back to the oven to cook to a golden brown.

Good morning everyone. I have 2 appointments today. Things are going great so far. It’s not supposed to rain although it’s cloudy I find it easier to see.
Dinner tonight will be good. I will make something chickeny but am not sure what that is. We do need to grocery shop at some point. I like how I say we when it’s just Dad who will shop.
I hope we all have a calm and productive day. Playing video games or healing while sick is still productive.
I have a question for all of us who have dogs. Does your dog only want to play tug o war? That’s the only game Dexter will play and he will not fetch a ball. I think all the doodle memes are right.

I wonder if play styles also have something to do w/the breed of dog? We have a really cute golden doodle in our neighborhood. Whenever I see him I think of Dexter.

Jiffy muffin factory is not far from where I grew up. It was a cool field trip for an elementary school me. My mother made jiffy muffins all the time when I was a kid.

I love cornbread and it is served somewhere here but I am not sure where. BFF amblet took me shopping in the US to get some but that was a couple of years ago. It is one of those things you cannot believe you just ate that it was so good foods.

@delta Dawn: Walker is a German Shepherd/Bernese Mountain Dog mix and he loves to play! He loves to fetch, play tug of war, run and chase birds, squirrels, etc. He is still young though so he has lots of energy.

Just put oil or butter in the tins so they don't stick. Heat that all up. Add the batter to the tins and cook until golden brown on top. Happy Tuesday! I love corn bread but I won't tell anyone here how I make it. I don't want to lose any of you as friends It is still very warm here for November but the past couple of days have been extremely windy and it has brought the much needed rain. I spent two hours on the phone this morning with a government agency trying, again, to get a matter resolved for a client. This issue has been going on for over a year now. Someone is not doing their job and it is not me. I have no idea what is for dinner. I need to get back to cooking more.

Afternoon Ladies! I stood in line outside in 60 degree drizzle this morning to vote and I can not get warm still! I was also a dumbass and was in only a t shirt and jeans, because I thought by getting there right at 7am when the polls opened there wouldn't be much of a line. Wrong! Live and learn. My Mom wasn't southern, but she had that cast iron corn bread pan that made the bread look like corn cobs. Wonder if my sister still has it? We grew up on Jiffy mix, and we ate it either with just butter or butter and Mussleman's APPLE BUTTER !!!! I LOVE that combo! I have tried to make it from scratch, and it comes out flavorless and the wrong texture. Also tried several different brands, and Jiffy wins every time. In adulthood, restaurants sometimes offer honey, and once I tried that---omg---honey and real butter ?!!!! Okay, I think I'm gonna NEED to make some cornbread tonight! My preference is Mussleman's Apple Butter----no other brand works for me. Although I LOVE all of Smucker's jams/ preserves, their apple butter isn't yummy for me. When Mom died (in 1990), we divided all of her cookware, dishes, etc. Mom's 1970's (or maybe 1980's?( Oscar food processor still works perfectly. We still use some of her high-quality pans, etc. She was an excellent cook and baker, and also dabbled in gourmet cooking sometimes. We still make many of her beloved recipes. Speaking of family recipes............my siblings are arriving here Thursday night so we can FINALLY go through alllll my Dad's stuff. Even though he died 2 years ago, it's been difficult to find the perfect dates for them to travel. I've already gotten the ingredients to make a Mom's "famous" recipe for them, and they'll be thrilled. Mom's beef stroganoff was also my little brother (he died in 2009) and Dad's favorite. I made it for them when I visited them in D.C. every time, and they appreciated it so much. Also made it several times for Dad when he lived with us. I'm also going to make one or two of my Mom's yummy desserts while they're here....so between yumminess and reminiscing and laughing our heads off, I look forward to seeing them. BUT----like any family, we also have sad memories, too. But my Dad really was HILARIOUS (Mom was NOT! ) , and we have sooo many inside family jokes. He could imitate ANY accent, he had very sophisticated humor, was erudite, but also very loving and kind. He DID have a horrible temper, but it was never taken out on US. some of you might remember I vented about his temper A LOT when he lived with us. It wasn't directed at US, but it was soooo stressful and I got so angry so many times. It was things like hearing him drop something and cussing. Not being able to open something, needing help, etc. and cussing. Imagine that during QUARANTINE !!! . Yea, it was so, so hard dealing with that. Thanks to all of that, I have *complicated* feelings about his death. Ugh, it's been hard. I yelled at him many times, and of course, I regret it and have horrible guilt. I sooo miss the FUN times we had watching our fave shows, reminiscing, looking at photos, LAUGHING, etc. I also REALLLLY MISS going to get a hug from him when I was missing Meaty and Sophie sooo terribly! I already know it'll be harder for me, since they just aren't as emotional as me. Same as when our baby brother died. I adored him and was more like a Mom to him than Mom was; so our relationship was different than theirs was. I was a complete wreck after he died, and wanted to talk about it, but they never did. Unfortunately, it's similar with Dad. Just the other day, I was trying to find a sweatshirt in Dad's room that has very happy memories attached to it. Just opening ONE drawer and seeing all of his clothes made me sob. I can accurately predict they will NOT be sobbing over seeing Dad's clothes! hen there's alllllll the homemade birthday cards we drew for him as kids that he saved. ALLL the photos, photo albums, etc. etc. Immediately after he'd died 2 years ago, I happened to find a photo album I'd never seen. It included a lot of letters from Congressmen, other D.C. political people, etc. etc. Many of them were praising the work he did on legislation/ lobbying, etc. Dad spent many years "on the Hill" (D.C.-speak for "Capitol Hill") as a lawyer who lobbied. (that may be an oxymoron, I'm not sure). ANYHOO........ It was very cool to learn that part of my Dad's career that he'd never shown us. Wowww.......I am RAMBLING, huh? If you even made it this far, I apologize to your eyes! It's time to leave and go vote, then go run some errands. I got one of my severe headaches yesterday while grocery shopping---ugh! I LOVE grocery shopping, so the headache ruined it. HOPING not to get another headache today......that's the last thing I need while standing in line to vote! (( hugs )) to anyone who needs 'em !!!!

Forget cornbread, in Louisiana I loved Hush Puppies with seafood. OMG they were SO good. I never made them but would always get them when we dined at a seafood restaurant.

I had a great big Siamese named Simon who was the world's best fetch player with the plastic ring from a milk jug. He would flip in the air jumping after it and would bring it back for you to toss it again. You'd get tired before he ever would. I miss that sweet boy!

@scrapintoee I enjoyed your rambling post, family memories are such a treasure. I recently attended a memorial for an uncle and a funeral for an aunt- it was so wonderful to see my brother and cousins from both sides of the family and to reminisce together. I spent a lot of time with cousins growing up, something that my kids and grandkids won't have. Families are smaller, busier and just not as close. @deltadawn our 9 month old Border Collie loves to play in every way. we throw at least 150 balls to her daily, I've started counting down from 5 and then tell her we are taking a break, she seems to understand. We discourage tug-of war, it seems to get her more excited and stimulated, we try to keep her calm, Try being the key work in that sentence. scrapmaven- the Pup would probably just eat the tape, but I might try it, I didn't stop at T.J. Maxx when I was out, I'll go back out later in the week.

Happy Election Day! Woke up to a stormy front coming through so decided to sleep through it. This is supposed to bring in cooler weather, fingers crossed. Going to vote this morning, then need to run a few errands and stop at the grocery store. Will spend the afternoon with DH. With the earlier sunset, I try to get out of there between 4 and 5 to be home before dark. Will probably work in my sewing room some tonight - trying to figure out where to squeeze in all those pretty new fat quarters I bought! Once again no clue about dinner. There is spaghetti sauce in the freezer so it may be that - or something else yummy from the freezer. **GypsyGirl**, how are things going at the SNF? I hope things are improving. He is pleased with the PT he is receiving there. Yesterday she rolled him between the parallel bars and got him to stand. He managed to get up for about 10 seconds. A week ago they tried and he couldn't do it so he is definitely progressing. I spoke with his internist yesterday and he feels the SNF is the best option for all of us, but advised that we hire a private nurse to administer his meds and other needs he might have during the day. So today's objective is to find one. The SNF doesnt have nurses and med techs?

There is a restaurant near me that has excellent hush puppies. The last time we ordered, they were out of them!

There are 2 different kinds- dry and crumbly and sweet. I like the sweet kind a little better for eating plain, but the dry one works for beans and cornbread. (And I assume for chili, but we all knoe how I feel about chili, so I will never know!) I made chicken enchiladas this evening.

Dinner tonight is going to be M&M garlic shrimp and salad and vegetables. No one wants to go to the store. I think we will live.
Dexter is looking for people to walk by. He could relax for a bit.
