I wanted to share how my week went. I just summarized my food experiment on Facebook. But you guys are my dinner peeps so I thought I'd share here.
My Facebook post:
I randomly followed Jenn Eats Goood on Instagram a while ago but then promptly forgot about her. (I'm not on Instagram a lot) But she randomly popped up this week and I thought, well it'll be an interesting experiment to follow one of her budget friendly food videos so let's see what happens.
The premise is that she has 5 dinner meals to eat within a week and she's shooting for around a $50 total for the ingredients and zero waste. I am lucky enough that I don't pay a huge amount of attention to price however, who doesn't like to save money? Waste is a huge issue for me. I don't like wasting anything.
So I chose her May 2024 video and began on Sunday.

She assumes you have pantry staples like olive oil, dry spices, maple syrup, that's kind of thing. She does not include them in her total as a well stocked kitchen should already have these kinds of things on hand. But for the weekly meal items in this video, she paid just under $55.
I happened to have the pantry ingredients so I didn't have to buy them. And then of her weekly ingredients I had rice (I buy 10lb bags) and a package of tofu. But I had to buy everything else. Jeremy shopped for everything at Meijer and my total was $48.06.
With that said, I also added a loaf of French bread and some Parmesan cheese. I also used regular pasta and soy sauce instead of coconut aminos (Jenn is gluten and dairy free). But otherwise I stuck right close to her recipes. Well, I did go a little rogue with red pepper flakes.
All the food was tasty. I ended up with 4 tortillas and about 1/2c of cilantro left at the end of the week. A couple of the meals there is no way they'd serve 4 people. But I'm only cooking for two. I did scrape some lunch leftovers a couple of nights.
All in all, this was a fun challenge. After months of depression this kick started my cooking mojo again. I'll be doing another one of her videos this coming week.
