Good Morning.
What a snoozefest, literally of a weekend. I have a virus of some sort and was sedated all weekend. I logged those sleep hours. Dh had it last week, but he wasn't as sleepy.
Today I'm gonna catch up on some chores and sit at my puzzle. I bought 2 new puzzles last week and I have to finish this one, so that I can get to work on my stash.
Dinner might be chicken tarragon. I'll see what dh wants. Ods will likely be here, too.

Happy Monday! Feel better scrapmavenMy sister saw my mom last night and she was very lucid and knew who she was. We think the lack of oxygen was the culprit earlier in the day as she wasn't wearing it. I'm going to take my dad to see her this afternoon. I haven't seen very much of her lately and while I feel bad about it, I'm really stressed out visiting her. I think it's all caught up with me and I've been having some stomach issues this past week and I know it's all stress related. Not fun! I took some fajita marinated chicken thighs out of the freezer so I'll make that with some rice tonight. I offered to take it to my sister's to cook as I think her DH is out of town this week. I get them at Wild Fork and they're very good and easy to cook up with some onions. Hope you all have a great day!

A quick check-in before I get busy. I am hanging in there. It was a pretty good weekend as I had a lot of projects around the house to keep me occupied. This week is the week of self-care - facial, makeup session to update/restock, mani/pedi and massage. Spreading them out through the week because I am still dealing with so much paperwork/phone calls. Today I'm having lunch with BFF, then running a couple of errands afterwards. Since I'm having lunch out, dinner will light. I made tuna fish salad yesterday and will have some of that in a pita. Super hot this week with a dose of Saharan dust thrown in so it will be perfect. Thanks to everyone for checking in on me.

Tearisci , now that you're back on your meds I hope that you feel much better by later today. Take breaks from visiting your mom, as you need them. You have to take care of yourself first. It's not selfish. It's healthy. Perhaps you and your sister can plan weekend breaks from parental duty, so that you can have true downtime. One weekend it's your turn. One weekend it's her turn... This is another moving part in your lives. Just as you balance work/homelife this is part of the mix and you need those breaks. It's healthiest for you to also have your own life, impossible as that may seem. Isn't it interesting how we meet people on the dinner thread and w/o ever seeing eachother we care so much?
**GypsyGirl**, I loved hearing that it's a self care week. You have earned every inch of that massage. I wish I could hire you a chauffeur so that you could be completely pampered.

Isn't it interesting how we meet people on the dinner thread and w/o ever seeing eachother we care so much? That's why I love it here! I'm home today and I'm happy about it!  . Retirement suits me ... I have things to do around the condo ... I probably won't leave the house! The booking system for subs is down so I hope it is fixed today ... Oh, I might leave the house because pork dumplings are calling my name for dinner!

I just want to go around feeding all of you and giving you hugs. What a snoozefest, literally of a weekend. Totally weird but I actually had a pretty decent weekend. But I feel like work this week is a snoozefest. I haven't seen very much of her lately and while I feel bad about it, I'm really stressed out visiting her. I think it's all caught up with me and I've been having some stomach issues this past week and I know it's all stress related. Not fun! When my sister is stressed, her stomach is so upset she doesn't eat. When I am stressed, I bury myself in cookies. This week is the week of self-care I am glad you are taking care of yourself. I made tuna fish salad yesterday and will have some of that in a pita. It's funny because the last time I ate plant based another dinner thread post had me craving tuna too. And now after reading this, I feel like I'm going to think about it all day. I had a nice time over at my friend's house last night. I picked up Chloe and she came and it wasn't so bad but she clearly was drunk. And that disappoints me. But I got to see Queenie. And she is the cutest. Tonight I am trying a new recipe for a chickpea/broccoli/rice casserole. I hope it's good. I'm going to put a ton of roasted garlic in it. I really need to sit still and read tonight.

It’s an absolutely beautiful day here today - sunny and 25degrees C. I’m enjoying sitting in the deck with my book, DH and Walker. I’m going to pick up my mom shortly. She wants to come over and see the dog.
Tomorrow mom will stay with Walker while DH and I go biking at a Provincial Park. It has a 14 km trail so we usually do the loop twice and then we will go for lunch before heading home.
DH turns 65 on Wednesday. He will officially be a senior citizen and is happy to receive another monthly government cheque! I will take him out for supper to a very expensive place that has amazing food but we only go there if we have a gift card. Wednesday is a special occasion so I will splurge on him.
Tonight I will go to watch grandboy #2’s baseball game.
Supper will be quesadillas made with rechauffe pork kabob meat.

Good morning! After a weekend of just not doing much, my week is looking busy. My backyard is in need of cutting but it has rained so much, the ground was too boggy. My priority tonight is to cut it when I get home. If my muscle soreness from that *(@&%@ pilates reformer board will let me do the pull string. I am already looking at a push button start mower for next year. Battery operated also. I thought I might try to start looking hard at the end of summer and maybe find one on sale. I did, however, just set up new internet. So my afternoon is looking short here at the office. I am happy about that! Dinner will be tofu ricotta open face sandwich. It has lentils and some sort sauce on top but that I think it should be quick enough to put together. My sister saw my mom last night and she was very lucid and knew who she was This was so very good to read. This week is the week of self-care This is very good to hear. You have been the caregiver for so long. You really must take care of you. One day I hope to utter that sentence. I'm working until I die it seems at this point. Well, gotta go. Several things to do here before I head out for the day.

I went to AquaFit this morning ~ the water was fabulous. I came home, took a shower, did my stretches and now I'm icing my back. We were hoping to see the Aurora last night but no luck in our area. I need to buy a light weight comforter for the summer. The old one is so disgustingly old. Dinner will be grilled steaks and corn-on-the-cob. This cracked me up! In front of a school on the last day before summer.

I did, however, just set up new internet. So my afternoon is looking short here at the office. I am happy about that! Emma and her boyfriend are without internet until the June 5th! The horror! One day I hope to utter that sentence. I'm working until I die it seems at this point. Oh, I'm only semi-retired ... I work ... sometimes too much!  . It will be another seven years until I am completely retired ... no idea about dinner, that’s a nice thing about being single. I don’t have to worry about anybody but myself. I love that aspect too!

sunny day with the fog off the coast and cool and breezy. went to gym this morning. the pool heater is getting repaired so I hope it is back for aquafit tomorrow.
more organizing today. last night was breakfast so tonight is for sure takeout. probably thai
yesterday I did almost nothing. so I have to get busy this week. maybe some mending too

Happy Monday, all. I was up most of the night and finally just got a couple of hours sleep in the end. ugh, but at least I don’t have anything specific I have to get done today. Tonight I will take a pill and go to bed early. Dinner might be Chinese chicken soup. There are dumplings in the freezer that I want gone, and I have some baby bok choy to toss in if it hasn’t died yet. Otherwise I’ll chop some cabbage and use that. Our heat wave is over (for now) and it’s bordering on COLD today. Which I welcome. Hope you’re feeling better today, scrapmaven. Mostly everyone is sounding better/healthier today, and I hope that holds for all of us.

Emma and her boyfriend are without internet until the June 5th! The horror! I called this morning and they were able to come out this afternoon. Now, I'm getting worried as I still haven't gotten the call they are on the way. And I just paid my now internet provider this morning before I set this up. So, once verified that I have new internet, I will be calling the old place to disconnect. It wouldn't be a horror to me normally except that I am now using YouTube TV and it is streaming. Could I live without it? Sure. Do I want to? Nope!

I just put together chicken parmesan, all ready to go in the oven, so that is dinner. I have some angel hair to go with. I should probable make a salad as well.
I worked both weekend nights, and we don't say the q word in the OR, as it is the kiss of death....but it was. The day and evening shift had one case each both days, nights, not even a phone call!! Probably the calm before the summer ramps up, and the "knife and gun clubs" decide its time for action!!

We have a Kobalt battery mower with a push start - I would suggest at least one spare battery if at all possible but I do love ours - so easy to use. We have some other tools of theirs and they all share the same batteries which is super convenient. And they are a pretty blue  Dinner tonight will be hot dogs and beans with corn on the cob since I forgot to defrost mince for mini meatloaves - we'll have those tomorrow instead. Went to the pool this morning and swam for about 1.5 hrs - I so love swimming and I've really missed it. I'm hoping DD's schedule in July and August will accommodate pool time for me (us).

Lawdy, I have got to share something. Since I had to come home early to get the internet installed, I thought I would get to work on the dinner items I planned on having. A tofu ricotta sandwich. I made my whipped tofu ricotta and got the lentils started. It called for a Tangy Pepper Sauce. Well, I have time so I will make that also. Along with some pickled red onions. Y'all!! When I say this is a must have condiment sauce I mean it. There may be something out there that equals it ready made, I don't know. But I am going to share this. This is from my meal plans that I get from Rainbow Plant Life. So without further ado, I give you Tangy Pepper Sauce! 3 fresno peppers or jalapeños, stems removed 1 medium red bell pepper (or yellow or/orange) 2 fat garlic cloves 2 TBSP red wine vinegar(or aplecide/white wine vinegar) 1 TBSP lemon juice 1.5 tsp kosher salt 1 tsp organic cane sugar 2 TBSP evoo 1. For spicy, keep the chile peppers intact; for milder heat, remove the membranes and seeds. De-stem and de-seed the bell pepper, then roughly chop it. 2. Roughly chop the garlic 3. Add both types of peppers and garlic to a food processor along with the vinegar, lemon juice, salt, and sugar. 4. Pulse until the mixture is finely minced but not totally pureed. (uhhhh, ok. fine line you walk here) 5. Transfer to a jar for which you have a lid and drizzle on the olive oil. Mix well and taste, adding another pinch of salt or sugar as needed. 6. Seal the jar and refrigerate for at least 8 hours before using. It'll stay good in the fridge for at least 2 weeks. Here are my notes: I used 1 medium jalapeño and did not remove seeds or membranes. I didn't have any good bell peppers in my house but I did have a brand new jar of roasted red peppers from TJs. I used maybe 1.5 of those. You don't have to use organic cane sugar. But here's a tidbit for you. Organic cane sugar is sort of ivory color. Regular sugar is white. The reason it is white is they process the organic sugar through the burned bones of animals. Thus the color. Also, the reason why vegans will always always use organic sugar as there is no animal product involved. Not that I am completely vegan but the bag of organic sugar at Costco is so reasonably priced, I buy it. I have several on hand, just in case supplies get low.

I’m staying with a vegan right now. He seems to only be vegan when it suits him. He’s been happy to have any of our food which is not. Except milk as he’s always been lactose intolerant. Going home in the morning. We’ve had a nice time but there were a lot of people here. My sister is coming back for the baby’s birth in 4-5 weeks. Our dinner was pizza because we were out all day.

I was supply teaching at DD’s school today - music! 5 classes with the same lesson plan - I’ll be humming that song for days! School is winding down here so I won’t have many more days of supply teaching to choose from. We had one of our favorite food box recipes tonight (that is just regular ingredients we always have so it was a good find that we have weekly now without having to add it to the box lol) -panko crusted Chicken with Montreal steak spice, home fries and carrots. The sun came out this evening but still cool - moved all the potted flowers into the garage for the night. scrapmaven I hope you kick that bug to the floor and stomp on it!

Hi all, posting late as we had extended family zoom tonight and it ran a little late. Dinner was rechauffe from the weekend. I bought and planted flowers this weekend, and my back is explaining to me that I need to get a potting table and stop bending and stooping so much! I'm only doing container gardening at this point and I waited longer than usual to get started this year because it's been such a cool and rainy spring. I still want to get at least 2 more large planters for herbs that we use a lot (basil, rosemary, cilantro...) and not sure what else. Anyway, my front porch and the end of my driveway both look nice and cheery with the new flowers. It was sunny and cool enough outside all weekend to get it done, plus DH mowed and we both did some weeding to get rid of the little shoots that were poking through the mulch. Oh, and re-positioned my cat's favorite birdfeeder on the window so she can continue terrorizing the poor birds.  Said bird feeder is a small one attached via suction cups to a window outside the sunroom and it came loose in the storms we had Friday evening. We also have a Kobalt push start mower that DH sometimes forgets to charge until right before he's ready to use it LOL. Agree that it's a pretty blue!
