Hey all 2Peas Refugees that helped me out on my thread from about January or so . . . I've been Gluten Free and Dairy free for about 6 months and it has gotten easier. I will say I was tempted w/ the yummy flavors of ice cream served on the Fourth of July but did refrain. I am sure I am feeling much better today than I would have!
I did make the most delectable Deviled eggs from Nom Nom Paleo. The secret ingredient? Making my out bacon grease aioli! We have farm fresh eggs from our own chickens, so they didn't look great, well because have you EVER tried to peel an egg that is less than a week old? I made 18 perfect hard boiled eggs to try and get at least 12 good ones, but still had ones with weak spots. Oh well, they tasted fabulous!
Any other success stories out there? I know that the encouragement I received as I started this dietary journey was so helpful. I am feeling better, and will be trying a few tweaks as I go.

It does get easier doesn't it? I can cheat on the dairy sometimes but have to be really careful with sugar (including fruit) as it causes a flare in my chronic illness.
No real success stories, but I'm traveling for work at the minute and not finding it as hard as I have in the past because I have things I know will work. Until they don't have the brand of something I want because I'm in a remote town in outback Australia!

I am dairy free. It's been about 3 years. I miss a few things, but surprisingly few. I discovered pizza is just fine without cheese. Once in a while I add some goat cheese.
Costco has some fantastic goat cheeses. A higher end grocery store here has soy milk ice cream that is amazing.
It's the restaurants that drive me nuts. So many add cheese to salads. I've lost count of how many times I have specified no cheese, only to have to send it back.

I have Hashimoto's and it has become clear to me that going gluten free is the best option I have to feeling well again. I gave also greatly reduced dairy - I am able to tolerate small amounts and the higher the fat content the more tolerated. Can't do yogurt, cottage cheese, low fat milk.
Thank goodness for all the Paleo and Gluten a Free blogs. I don't feel deprived at all!
OP nice to hear these changes have led you to a path of wellness.

I'm not 100% dairy free. After going grain free I had a bad reaction to some milk I had reintroduced after restricting it for a couple of weeks. I've had a tiny glass of milk here and there, like 4 oz. I do eat cheese and yogurt. Some people only react to certain types of dairy. I guess I'm one of those. I don't drink any almond or coconut milk because so far I haven't found any locally that don't contain carageenan.

I have been on/off gluten-free for a couple of years (mostly "on" when I get lazy), but feel SO much better when I'm totally off it. Right now DH and I are halfway through a Whole30 (no dairy, grains, alcohol, refined sugar, or legumes) and we both feel really, really good. My eczema has significantly lessened, and we both have so much energy. The hardest part for both of us is our morning coffee, because we always had cream and sugar. A few weeks ago I started making homemade almond milk, and it's the perfect substitute - I was surprised at how easy it is to make, and now that I've got the routine down, it's not really that much extra trouble. We blend a little almond milk with our coffee in the morning, and it gets frothy like a latte - add a little cinnamon, and I actually think it's better than our "old" coffee ![:)](//storage.proboards.com/5645536/images/MNrJDkDuSwqIMVw33MdD.jpg)

I've been gluten free/dairy free now for 3 years. For me, gluten causes migraines, and when I stopped eating products with gluten, I started having gastrointestinal issues with dairy. It's like the gluten I used to eat masked the problems I have with dairy. Weird.
Anyway, I pretty much eat a clean diet, with very few processed foods, and those I do eat are minimally processed. I try to focus on non-GMO foods also, as there might be a connection to my migraines and genetically modified grains.
I feel SO much better now that it's not hard to turn down food I can't eat. Just got back from a family vacation, and one night at dinner everyone at the table ordered really rich, decadent desserts. I was lucky to get lemon sorbet with fresh berries--which was absolutely delicious. I really think I das the better dessert!

I have been Gluten Free for 3 years. I find it pretty easy most days, but when we go to bbq's or potlucks I find it really hard to avoid Gluten. We went to a bbq on the 4th and something must of had some hidden gluten. ![:|](//storage.proboards.com/forum/images/smiley/plain.png) My arthritis has been flaring the last 2 days. Does any one have a recipe for a GF cupcake that they love? Looking for one that isn't too heavy. All the mixes I have used seem to be really dense. TIA
