I just bought a Big Green Egg this week!!! I've been drooling over my two uncles' eggs for years and have had some of the most amazing feasts off theirs. I am totally jealous of their eggceptional egg skilz!
Anyone else use a Big Green Egg? I sure could use some tried 'n true tips and recipes. I have tons of questions about accessories and what I need and what I can live without. I have my eye on a plate setter but I'm confused about all the other stuff I need with that gizmo.

Oh too funny DH just got the XL this Sat - three trips back to the store to replace broken pieces of it The store owner said he had never seen anything like it. It seems fine now and DH cooked dinner for us twice He was told to not cook anything too hot on it for the first few times so we had marinated chicken which turned out so tender and bourbon maple pork chops - really good. Hubby is convinced you shouldn't mix fish or processed meat on the same grill as used for other stuff - he read that somewhere so no salmon on ours - he will use our old grill. We got the plate setter - but haven't used it yet. I plan to buy the cast iron grates to do steaks and I know that hubby wants this thing that is an after market thing to help regulate temps for the long smokes like pulled pork. Hubby just made ribs a few weeks ago on our old smoker and used the 3 2 1 recipe and they were really good. The pork butt recipe he uses comes from the book Low and slowno recipes from the green egg site other than the bourbon maple pork chops that were topped with bacon - I have looked at it a bit and everything looks really good. I didn't know there was a forum there but I guess it makes sense - I am sure DH has been on there. I would love to see other's input as well as I look forward to hubby trying new recipes - of course I think I spent more time cleaning up after him than when I cook a full meal LOL.

I don't have a recipe, because that is dh's turf. I'm afraid of blowing up the yard. Dh grills lots of chicken dishes. Anyway, he makes the best pizza on the Egg using Trader Joe's pizza dough. If you have a TJ's in town I'd really recommend it. Apparently, it's quite popular. He does regular w/toppings and Margareta. It's so easy to use, according to dh. We also do s'mores during the summer w/everyone standing around w/their skewers. You'll love it. It cooks evenly and everyone says the food is great.

Me! I love it! Go to the egghead forum to get tips on almost everything. A few of my favourite things to make are fajitas (grill girl has a great recipe), smoked brisket, 3-2-1 ribs, roasted beets, and meatloaf (the smoke makes the difference). In terms of accessories, the plate setter is the only 'must'. I would also pick up a charcoal chimney.

Plate setter is a must.
If you like steak and chops, you might consider the cast iron grill. It gets really hot and makes great grill marks. The heat makes it faster cooking too.
We love the salmon recipe in the booklet. Have fun!

If you have a TJ's in town I'd really recommend it. Apparently, it's quite popular. I don't have a TJ's in town but there is one in Birmingham and I go there pretty often. I didn't think to look there for pizza crust. I'd like to try making my own but I don't want to overwhelm myself. I'd love to try a calzone too! I did get a cast iron plate setter today!!!! I went to two stores today and was pleasantly surprised by the one I thought would be the most disappointing. BOY was I in for a TREAT! I mean, they practically have a whole BGE store in the store! They even had a limited edition XXL Egg. That sucker is officially ginormous! They even had some outdoor kitchen set ups but it was sprinkling and really cold so I didn't want to go outside. Next time! They had every single BGE Eggcessory and then some non-BGE brand stuff. I got the cast iron grate for about $20 cheaper than any other store I've called. I was really sold on the iron one because it flips over for another grilling surface. My uncle swears by the steaks on his. I also bought the ceramic beer can chicken holder thingie. I have a metal one that I used for my other grate but it always was kinda wonky so I got this one. Plus, now I can do two chickens if I want. I think I'm going to give some pork tenderloin a shot this weekend. I'd also like to try some wings again. The funny thing was with my first attempt was that while I charred the skins a little, the meat inside was still really moist and tasty. I had not heard anything negative from my uncles about cooking any kind of fish in the BGE. I've seen tons of recipes for fish on several Egg blog so I can't see a reason not to really. I want to try a different fish next time I get some fish. I can't wait to Egg again!!! Hard to decide what to do! meredith
