Anyone ever try any of these recipes? If so, which one(s) and what is your opinion of how it turned out? To me it looks like some of the recipes have lots of cheese (which is a whole other thread), and that would be the fattening part!

I have made the "mashed potato" one. Not the exact recipe listed on that link but close and it was awful! I followed the directions but it just basically tasted like chopped up cauliflower. I love cauliflower but not the faux mashed potatoes version.

I didn't care for all mashed cauliflower. After making it a few times and trying some recipes I made up my own. Equal parts by weight of cauliflower and russet potato peeled and steamed (potatoes in bottom and steam 5 minute before adding chopped cauliflower). Once it's cooked I dump the remaining water out of pot, return veg to pot on stove and steam off the excess moisture (very important or you will have a soupy mess!). Run it through food processor or ricer. I only add an ounce or two of cream cheese to it (season with salt). That's for about 1,200g total of raw potato/cauliflower (enough to feed 12-14 adults on a holiday). It's very good and I was kinda surprised so many family members ask for it at each holiday. A few got done with dinner and asked if I'd forgotten to put them out! They thought they were just MP's! It's nice to have MP's with half the carbs.  I've also made with the leftover MP/cauliflower above, potato ham soup, a corn chowder, and a broccoli cheddar soup (use an extra sharp aged cheddar to drop the calories and qty used).

I like it best roasted. I use some lemon zest, garlic, rosemary, salt, pepper, and olive oil. Roast in a hot oven until browned. It's really really good that way. I didn't think I liked cauliflower until I tried it that way.

I have tried the pizza crust and did not like it. So much so that I threw it in the garbage. I like raw cauliflower but I can not stand the smell or texture of cooked cauliflower so it's no surprise that I didn't like this. But I just had to try it!  Everyone swore it was nothing like cauliflower. Wrong. I could smell the "cauliflower" as it was cooking and as soon as I opened the oven door I almost gagged because it smelled exactly like cooked cauliflower. I guess if you like cooked cauliflower, you might like one of those recipes.

Anyone who says they taste "just like real mashed potatoes" or "my family didn't notice the difference" is lying  I will say, I have used it as rice in stuffed peppers and in a fried rice dish and I didn't mind it. I will make it again....but the "mashed potatoes"....BLECH!

I will say, I have used it as rice in stuffed peppers and in a fried rice dish and I didn't mind it. I will make it again....but the "mashed potatoes"....BLECH!  I pinned a few cauliflower "rice" dishes last week, I might give them a try!

I make cauliflower mash a lot and we love it. No, it doesn't taste like mashed potatoes, but it's delicious in its own right. I steam the cauliflower with 50/50 water and chicken stock, then blend it with some more chicken stock, garlic, some pastured butter, salt and pepper. It's great.
We also love roasted cauliflower, etc.. But the pizza crust and so on - no, I'm not even going to bother. That use doesn't appeal to me at all.

Roast cauliflower is a regular side for us. Last night I tried something different and sauteed it with shredded brussel sprouts in a little bit of olive oil and salt. Delicious.

I've made mini pizzas with cauliflower in the past and have enjoyed it, even DD ate it without complaint.
I'm not a fan of cauliflower rice, simply because of the texture. The taste is fine, but I'm a total texture person and just don't like it.

I've never made the mash. I love eating it raw, steamed, and roasted. Cauliflower is my favorite vegetable.

I've made cauliflower fried rice, buffalo bites, and mashed "taters." I found all of them to be tasty, but I didn't fool anyone that it wasn't cauliflower. My dd liked the buffalo bites, but the other two she wouldn't even try. I find it a healthy way to get the basic flavor of a not so healthy dish.

Yeah, I really like cauliflower but the substitutions for pizza crust and mashed potatoes etc, don't appeal to me either. I'd rather just steam or roast or use a recipe that's meant for cauliflower. That Bacon Cheddar Cauliflower Chowder recipe looks pretty good though.

I have made cauliflower couscous. It was nothing special.
It was passover and we couldn't eat most grains, so the recipe came in handy.

I love roasted cauliflower Me too! Wegmans deli counter makes the best roasted cauliflower with grated Parmesan cheese. Everyone in my family loves it!

I almost threw up once after eating mashed cauliflower. Now I avoided at all costs. However, I do love roasted Collie flower and it goes great with chicken.

I have a recipe for Cauliflower Coconut Milk/ Lime Rice that our family loves!
I know someone that made a cauliflower crust pizza and she said it tasted ok but was way too much work, so I haven't been tempted to try.
