Tonight I'm recreating a couple dishes I learned how to cook in one of the Italian cooking classes I've been taking. We are having Walleye Al Cartoccio and Pasta Primavera. What are you cooking tonight?

Casserole with potatoes, ground turkey and the dreaded soup in a can along with various spices and stuff. I was feeling very UNCREATIVE and just threw crap in a dish. Since it is just me, I plan on keeping that name to myself. We're still eating leftovers from Friday. I might bake some chicken breasts though and set a few aside for lunch salads this week. DD is still staying at a cousin's house as DH sprained an ankle and doesn't feel like driving today. Like an idiot, I let my license go dead without realizing, so she's stuck there another night. I don't know but you all having some good meals. Just me and my lil guy so probably paninis with some spinach from the garden. I'm miserably hot and nauseous in this heat, baby doesn't agree, therefore I'm good for nothing.

I just made sesame noodles that I found on allrecipes.com. Added some shrimp and called it a meal. It was the first time in a very long time that dinner got a thumbs up from everyone! Yeah! Oh and watermelon for dessert.

We had a late lunch, turkey burgers and a packaged pasta side that was not that great. Hot and humid here, cooking anything more seemed like WAY to much work.

There's still a bunch of stuff in my fridge and I am utterly uninterested in cooking. So I'll put something together from all that. I think tomorrow, anything still leftover from Friday is going in the trash. I'm tired of looking at it. (Sorry, maybe tomorrow I won't feel so grumpy. And maybe pigs will fly.)

What are you cooking tonight? Walleye sounds wonderful. I forgot that we have some in the freezer from when my DH and his brother went fishing in Canada. We just got done and we had baked tilapia and steamed broccoli and cauliflower. I've really been trying to cook and eat healthier this past month.
