DH would make peach cobbler with it. That's his go to summer dessert.

I would dice some, spread them out on a cookie sheet, freeze them, and then put them in freezer bags to use later in milkshakes! A little milk, a little ice, a handful of frozen fruit, and a sprinkle of fat-free, sugar-free instant vanilla pudding in the blender for a few minutes, and YUM!

I made peach jam and then just canned peach slices in a simple sugar syrup when I bought a bushel recently. For the jam, I just followed the instructions on the pectin box (I use the low sugar one). For the sliced peaches - I followed the Ball Blue book instructions

Probably not very helpful because it doesn't use a lot of peaches but my favorite thing to do with peaches is to make fresh peach milkshakes. So so good!

Are they clings or freestone? Clings are kind of a bitch to cut off the pit, but I did use clings this weekend to make a peach cobbler and it was AMAZING. Here's the recipe: Peach CobblerYou can use up a lot of peaches in a hurry making cobbler. Serve it with vanilla bean ice cream. It was phenomenal. If you don't have cornstarch on hand, you can sub in flour. Peel the peaches (relatively) easily by boiling water, dropping the peaches in for about 60 seconds, and then putting them in a bowl ice-cold water. The skins will pull off easily by hand and not take much of the fruit with it. Glad I tried that method, it worked well. Wear an apron though, the juice gets everywhere no matter how you peel them.

Gosh, I would pay for canned peaches! I hate fresh peaches but don't want to buy those that are sold in stores that are drenched in tons of sugar. Good luck!

Blueberry and peach pie would be my first choice. They freeze well, which is nice when you can pull out a pie in the fall or winter months. Freeze some for smoothies too. RST

I like to purée some and then freeze in ice cube trays. I use them to spice up granola cereal and also for smoothies in the winter. I would also can some for peach cobbler.

Last time we lived in Texas, I got a whole fruit box of peaches for five bucks from a guy at the farmer's market. They were bruised or ugly or otherwise unsaleable. But they were actually ripe and smelled so good and were only a day or two off the trees in the hill country. I couldn't dunk them to peel them because I had to sit and cut the bad bits off but the labor of peeling them by hand was worth it when the jam was done because it was HEAVEN. Summer in a jar. All that work only made about 16 jars of jam and I could have cried when we finished the last one. Now we're back close to hill country and I cannot wait for the peaches to come in because I'm going to bottle up another summer and enjoy it for as long as we can.

Peach salsa. I don't know how well it would keep though. I just make it one peach at a time and eat it right away.
I just dice the peach and add a scoop of the fresh salsa from my market's produce section.

I think I'm gonna do a pie filling that I can use for cobbler. Yesterday I made strawberry pineapple, lemon flavored jam and wow it came out great! oh and thanks for all the great ideas!!

Okay, that was hilarious. OP, when I was a kid we would make a trip to the Western Slope of Colorado and bring back several bushels of peaches in the fall. My mom would make peach pie and cobbler; she would would slice them on our cereal (instead of bananas), and she would use them as a substitute for strawberries, for instance, so instead of strawberry shortcake for dessert we got peach shortcake. And of course we would eat them whole. Delicious and lots of great childhood memories.
