We're having a potluck going away lunch for a dear coworker and the organizer has asked a few of us to contribute a dish. I'm feeling the "pressure" (self imposed) because my coworkers are people who make their own pasta, jams, bread, candied bacon, you get the idea. I'd like to make an appetizer or side dish that I don't have to reheat or keep warm for several hours, ideally something I could make the night before and serve cold or at room temperature. Someone is already bringing a quinoa dish and spinach salad and pasta salad. Any suggestions?

linkThese are so easy, pretty and good. A hit every part I have taken them to. You can make ahead, refrigerate and serve (I like mine at room temperature or just slightly chilled) hth.

Thanks for the link! These look delish and simple. How far ahead do you make them? I was hoping to make something the night before. Do the salami cups get "soggy" after a while?

LOL! I've never made them the night before. You could mix your cheese and artichoke stuff the night before in a bowl and refrigerate, then in the morning bake the cups, let cool, then throw the mix in them and go. Another take on this that could be prepped the night before is mini caprese skewers. I'll try to find the recipe.... linkHere it is. When I made these I added pepperoni or pieces of salami to half of them, the rest I left meatless. I found marinated mozzarella in my grocers 'fancy' cheese area.
