I've been going to the same hair stylist for about 25 years. Over the years we've become friends. She's a sweetheart a little older than my DDs. Today we're meeting for happy hour to have a few drinks and then to my house for dinner. We're having Pasta Alla Toscana, a crusty baquette thanks to Panera and a chopped salad. Dessert will be French coconut cream bars.
What's cooking at your house tonight?

Chicken tortilla soup, I think. I have leftover ingredients from the Cobb salad I made last night that I can use up.

So much variety!
i'm roasting chicken breasts and creamy mash, and spinach, sprouts and cauliflower steamed. A bit of a comfort food night as it's so cold and miserable outside.

I'm making the bacon chicken ranch glop for DS mentioned yesterday, and not happily. Also artichokes because DGS loves them. ETA I reserve the right to change my mind and make something less gloppy with the chicken.

GF hot dogs with cranberry sauce and baked potato for dd.
Take out (I am thinking chinese) for dh and I.
Ds is very sick and I haven't accomplished much other than get him back to the doctors and throw a load of laundry in the dryer. Been taking care of him and in doing so didn't take out meat from the freezer.

Beef and barley soup. This is the first night in about three weeks that we have NO activities or meetings. I'm so excited to eat hot, comfort food and just chill out without rushing from one thing to the next. I'm even looking forward to doing a couple loads of laundry...because I'm HOME to do them!

Wha?! Can you share a little more about that, Lucy?! Here's the recipe. It came from a radio station web site. I don't even think it sounds right. 500 degrees?? If I make it, I'll fiddle with it. If you make it, please report back. Loaded Potato and Buffalo Chicken Casserole: 2 pounds boneless chicken breasts, cubed (1") 8-10 medium potatoes, cut in 1/2" cubes 1/3 cup olive oil 1&1/2 tsp salt 1 Tbsp. black pepper 1 Tbsp. paprika 2 Tbsp. garlic powder 6 Tbsp. hot sauce Topping: 2 cups fiesta blend cheese 1 cup crumbled bacon 1 cup diced green onion Preheat oven to 500 degrees. Spray a 9X13" baking dish with cooking spray. In a large bowl mix together the olive oil, salt, pepper, paprika, garlic powder and hot sauce. Add the cubed potatoes and stir to coat. Carefully scoop the potatoes into the prepared baking dish, leaving behind as much of the olive oil/hot sauce mixture as possible. Bake the potatoes for 45-50 minutes, stirring every 10-15 minutes, until cooked through and crispy and browned on the outside. While the potatoes are cooking, add the cubed chicken to the bowl with the left over olive oil/hot sauce mixture and stir to coat. Once the potatoes are fully cooked, remove from the oven and lower the oven temperature to 400 degrees. Top the cooked potatoes with the raw marinated chicken. In a bowl mix together the cheese, bacon and green onion and top the raw chicken with the cheese mixture. Return the casserole to the oven and bake for 15 minutes or until chicken is cooked through and the topping is bubbly delicious. Serve with extra hot sauce and/or ranch dressing.
