Taco Spaghetti (adapted from a recipe at http://www.readyseteat.com) 1 lb ground beef 1 pkg taco seasoning mix (see note) 1 10 oz can rotel (I used half of a 14 oz can of petite diced tomatoes and half of a 4 oz can of green chilies) 2.5 cups water 8 oz spaghetti noodles, broken in half or thirds Sour cream and shredded cheese for garnish (we used sharp cheddar) **note** instead of taco seasoning I use the following: 1 tsp salt 1 tsp chili powder 1/2 tsp crushed red pepper 1/2 tsp garlic powder 1/4 tsp oregano 1/2 tsp cumin Brown ground beef on stovetop high or oven 350 and drain well. Add taco seasoning, tomatoes, and water. Stir. Add spaghetti. Bring to a boil (I use oven/250 for this). Cover, switch to stovetop medium, and cook 10 minutes or until spaghetti is tender, stirring occasionally. Top each serving with a dollop of sour cream and some shredded cheese. lucyg
