PDF attached to this post. This is from TopSecret Recipes, and from several years ago, so it's not the "updated" version of the pumpkin bread. I've made it, though, and it's really yummy. I typically add a little extra of all the spices but allspice, but I like it "spicy."

It's not Starbucks because Starbucks doesn't burn theirs. It's good but don't leave it in the oven for 70 minutes like the recipe says. I left mine in for 60 and the ends are very "crispy." It also doesn't have the same texture as SB and maybe they use real pumpkin instead of canned, who knows, it's a secret right?. Damn you Howard Schultz!!
I should have added more spice like Sock suggested.

I should have added more spice like Sock suggested. I almost never follow the suggested baking times because everyone's oven is different. I always just get close and do the toothpick test. When I've made this, the texture has been very similar to Starbucks', so I'm not sure what's up with that.

I'm going to try again with this recipe. How much and what kind of spices did you use sock?

I'm going to try again with this recipe. How much and what kind of spices did you use sock? I used all the same spices as in the recipe, but almost doubled everything but the allspice. The allspice is pungent, so I kept that the same. I kind of just eyeball it; I'm not a good measurer when it comes to the spices. I also almost always double the vanilla. In everything. When you measure out your flour, do you spoon it into the measuring cup or do you dig the cup into your flour? I spoon my flour in, so it's lighter and fluffier. Sometimes people dig their cups into the flour and you wind up with a much denser measuring cup full of flour.

I just opened the PDF recipe again and guess what - there were no spices listed at all so I probably didn't use any - we're talking not the worlds smartest baker here. No wonder the bread is meh. Off to look for the revised recipe

Oh, crap! I'll see if I can find the right one. I add cinnamon, nutmeg, allspice, and a tiny bit of ginger.
