I bought a bag at Costco today thinking they are so pretty. Thought I might process some cream cheese with sun-dried tomatoes and stuff them with that.
Have you done anything delicious with these?

If it's the small kind of bullet shaped ones that are very sweet (I've grown them, and they were called "yummy" peppers) I once mixed up cooked crab meat with pineapple cream cheese, a very small amount of finely minced red onion and a couple pinches of lemon zest and stuffed the mixture into the peppers It was savory-sweet and tropical. I'm not a huge fan of cream cheese, but thought they were pretty good. DH absolutely loved them.

I make nachos out of them. I consider the pepper the chip and stuff with black beans and top with chicken, cheese and a pickled jalapeno slice then bake for a few minutes to get it all hot.

I saw a post on Pinterest that looked yummy...cut the peppers in half and stuff with taco meat and top with other taco/nacho toppings.
I generally just eat them plain or with ranch dip or hummus.

I don't have a written recipe for it as I always improvise, but I like to stuff these with a mixture of smoked gouda (shredded) mixed with cream cheese, some scallions or minced red onion, some crushed garlic cloves to taste, sometimes some crumbed bacon in the mixture (or sometimes I wrap in bacon). I usually stuff them with the mixture, wrap with bacon and put them on small skewers that have been soaked in water and then grill them. I do these with jalapenos too.
Our favorite way to eat these is grilled with other vegetables (red onions, baby bella mushrooms, etc) on a kebob skewer or in a grill basket and seasoned with olive oil, white balsamic (or regular balsamic) vinegar, kosher salt, black pepper.

I have seen them stuffed with tomato rice before. I love tomato rice. I love it a LOT. It looked good, but
I HATE ALL PEPPERS.
We made them that way. We baked them in the over for a "few min" I can't give you an exact time as I stuffed peppers. I didn't cook them. I think until they shrivelled on the skin a tiny bit. You want them to cook but not over cook. (Don't take it from me, I just stuffed and know they turned out great according to the guests).
